Last night, I made a salad in 3 servings that will last 3 days from ingredients from the food pantry. From the pantry: spinach, arugula, mircogreens, baby carrots, orange bell pepper, fresh artichoke, tilapia fillets. From my own pantry, i used fresh lemon juice and green onion, a seasoning packet from ramen noodles, orzo, olive oil, and furikake seasoning. Oh, and kosher salt and pepper.

I used some of the tomato I got from the food pantry earlier in the day and had a vegan bacon blt.

Yesterday, I had a large salad. Just romaine leaves, green onions, tomatoes, croutons and salad dressing.

Tonight, I will either have another leftover enchilada or another salad. Whichever I choose, it needs to be something prepared quickly for raid night.
(I may even have a few Thin Mints if I go with the salad)

I have primarily been eating my enchiladas for dinner the past few days.

Tonight is Spicy Sausage Pasta (a one-pot recipe) but I am thinking of changing it up.
Instead of 1 can of tomatoes with green chiles, I am thinking 2 cans (for more veggies).
Or maybe 1 can of tomatoes with green chilies, and 1 can of just diced tomatoes.
To make it lighter I could also switch to turkey sausage but i love this garlic pork sausage i have found.

I am going grocery shopping today so I have more options.

Either Salisbury steak (without mushrooms) on top of egg noodles with a side of roasted brussel sprouts.
Or chicken enchiladas with a side of refried beans and mexican rice (all of which would be topped with tomatoes and green onions).

I have rotisserie chicken that needs to be used up, which is what I use in the enchiladas... do not want the chicken to go bad.

Last night I had tacos, the tomatoes were falling out all over the place, but I still found a way to get them back on the taco (or straight to mouth instead of with taco).

Tonight, leftover spicy sausage pasta. I will be in a slight time-crunch between work and wow raid (thing with friends on computer) so leftovers is the way to go tonight.

I ended up having the Rotisserie chicken with rice and a large salad. At the store, they had bottled OLIVE GARDEN salad dressing... i know not healthy but oh so yummy.

Last night I had blackened tilapia, with rice, broccoli, and topped with a lemon-mustard sauce and toasted almonds.
(The description lists everything except the EVOO used... a very basic but oh so yummy meal)

I do not know the plan for today yet... I am thinking Rotisserie chicken (since I need to go grocery shopping and do not like to cook after going to store) with rice (still got some leftovers) and a salad (since that takes almost 0 prep).

Made baked ziti last night. Loaded with veggies and ground turkey. I will be able to eat on it for the next 2 days before I make my next dish.

Used my Taco frozen leftovers for Taco Salad last night. I now know my taco meat plan actually worked!!!

Spaghetti squash with bottled low cal sauce. I tried this squash years ago and hated it. Now learned how to cook it with a little olive oil, salt, pepper and garlic powder and love it especially since I can do a big plate for around 150 calories. One squash makes around 4 meals so don't need to cook for a few days.

Yesterday, I made Buffalo Chicken stuffed shells. It was a new recipe for me to try.
Followed instructions exactly.

Took 2 bites, and then reheated leftovers from another night.

I normally can live off of buffalo chicken, but something just did not work in the recipe I had. It is off my list to never be done again unless I can find a recipe that is drastically different.

I am making either scrambled eggs or an omelet tonight.

It will have bell peppers (3 colors worth), shallots, tomatoes, eggs (mixed with a tiny bit of 2% milk), potatoes, a little bit of cheese, and hot sauce.

I am going to completely dice the peppers and my shallots, and store them in multiple small containers. Again I am freezing them in the size of 1 serving and then would just have to thaw a serving at a time.

I made Tacos! The taco meat was made with beans to also be used in Taco Salad.
I froze my leftovers but in a way where 1 thing can be used for 2 tacos or 1 taco salad bowl.

I am trying to get used to putting things away stored in the size of 1 meal instead of the entire recipe.

Tonight, I am making Spicy Sausage Pasta. It will also get frozen into multiple meals. It is a one pot meal, and the leftovers are great for lunch! (Especially since it is lunch within 1 container, not requiring preparation, just needs to be reheated)

I am going out for dinner tonight! Planning on salmon filet and cheesecake! The restaurant is called "Cheesecakes". It's a postponed Christmas Party dinner. We usually have it at Chinese restaurant, but they were closed this year on our annual date.

Pastitio is a pasta - meat casserole. The layers are held together by a custard sauce
that firms up when baked at least one hour. Every Greek food festival has a big pan
of tomato sauce- Its mainly made for the rice side. Then again there are those Greeks
that like the tomato sauce on the whole plate!

I make pastitio with lean ground hamburger (90%) and whole wheat elbow or large elbow
macaroni. My pastitio casserole pan yields 12 servings, each 313 calories. I made
this to alleviate work from home meal preparations. At lunch today I had one serving with
fresh cooked broccoli spritzed with a raspberry vinaigrette. .

You probably want to talk to the person who posted that for dinner, but pastitio is basically Greek lasagna. I have had it, so yummy, but a lot of calories. Usually made with lamb (can use beef), a behcemel sauce, noodles. I can't remember if it has a Greek-style tomato sauce (with cinnamon) or not. I had it for the first time when I was a kid and went with my parents to a festival at a Greek Orthodox Church.

Made stove-top macaroni and cheese from a semi-homemade recipe. Blew my calories by 253 grams. Used to be a lot worse than that, and since I just joined SP I am not concerned. It will get better! My portions are already improving. A lot of people's dinners sound delish!
