Made a kettle of sausage (turkey) & cabbage soup today. Put in tomato sauce, carrots, celery, garlic, broccoli, leftover brown rice, great northern beans, chopped cabbage of course , & some beef broth.

Going to have "Breakfast for Dinner" tonight. Making Canadian bacon & cheese on an English muffin with the egg being cooked inside an onion ring. Just saw it on one of the cooking sites and thought it looked yummy. Blackberries on the side! Yummers too.

Tonight I made Chicken Tortilla Soup in the crock pot. (Less than 400 calories per serving!) It was delicious. I cooked it on low for 8 hours, used frozen chicken breasts, and since my Aldi's doesn't carry Rotel tomatoes I just used the Aldi's brand diced tomatoes with basil. The only toppings I added were some fat-free cheese and tortilla chips. I will definitely make this again!

Sunday dinner was baked lamb chop, noodles casserole with kale, chopped tomato and chopped onion cooked with lemon juice and tomato basil sauce.

Dessert was diet Jello cheesecake pudding topped with fresh strawberry slices.

SuzzQ4life, thanks! It was great. I make the dressing myself using rice wine vinegar, chili oil, sesame oil, low sodium soy sauce, sriracha sauce, candied ginger, garlic, and water. It makes a great dipping sauce for spring rolls, or a good salad dressing. Plus 2 tablespoons is only around 30 calories (I use very little oil because sesame oil and chili oil are so flavorful).

We had leftover meatloaf, buttercup squash, a huge lettuce salad, and skim milk. Tonight we treated ourselves to some frozen yogurt (vanilla bean) topped with carameled apples.

We are planning on watching the Super Bowl this afternoon so our dinner is basically going to be just grazing on goodies this afternoon. I made a 5 layer hummus dip that we'll enjoy with the quinoa & black bean tortilla chips. Also going to snack on some shrimp with sauce, guacamole with pita chips, & some fruit.

Winter storm time in New England, I made some delicous Vegetable Beef broth Soup
and added spinach, sliced mushrooms, lentils & 'no yolk' flat noodles. Tasty!

I found a great deal on beef polska kielbasa yesterday, $1.74 per package! I bought several for my freezer and had some of that with cooked cabbage for supper. Delicious and cheap. :-)

Tonight (Fri.) planning on open-face tuna melt with sliced tomatoes and Swiss cheese on top. A nice romaine salad on the side with lots of veggies.
