Sunday night had scrumptuous shredded romaine salad with diced red & green
peppers, carrot shreds, sliced cucumber and artichoke hearts. Topped with
light raspberry vinagrette dressing.

Dessert was Jello chocolate fudge pudding, one of four servings at 80 calories if
made with skim milk.

Friday night was pizza with friends
Today is a partial fast (I am getting back on track with Intermittent fasting - allow 500 cal on fasting day - )

So "dinner" will be very simple - a chocolate jello/pudding with whey - It should be satisfying and I can eat again tomorrow. Please don't jump all over me - google it- there are studies, etc. and it is how I lost weight the last time....

PS To my old SP friends - It's been a very rough journey... My beloved, healthy, athletic, tall, dark and handsome husband died in August 2012 from a very aggressive cancer... In the many months caring for him I was stressed and didn't "care" anymore, and put back on 30 pounds I had just finished losing... And then I gained even more...

Tonight, beef "street tacos" with wilted kale, white onion, roma tomato and plain LoFat yogurt mixed with garlic, lime juice, and New Mexico red chile powder (mild, for the wife; I'll be adding MadDog 357 ghost pepper sauce on my tacos. These are beef versions of my

Rice, homemade pinto&redKidney beans ranch-style on the side, with New Mexico green chiles mixed in (such are leftovers from earlier in the week).

Low Sodium Tortilla chips (homemade pico de gallo w/ valentia regular red sauce)

BTW, this is not Tex-Mex style - being a dedicated Mexican and New Mexican Food addict. Also, did you know the secret to fried rice recipes is using day-old rice? That's a hint I found out from Spicie Foodie(tm), I recommend her website & newsletter.

I took 4 chicken tenderloins, frozen broccoli, green onions, refried beans, lightly spiced with garlic powder, red chile powder, Italian herbs, parmesan, a splash of lime juice and some taco sauce and made burritos for my wife and I. I nuked the chicken and broccoli, combined all in skillet on LOW. Leftovers were enuf 4 lunch another day.
