Just tried this tonight... amazing!! Chocolate Avocado Mousse
Google for tons of variations, but here's the recipe I tried:
2 ripe avocados 1/4 cup cocoa powder 1/4 cup semi-sweet chocolate chips 1/4 cup agave nectar 1/2 T vanilla
Scoop the flesh from the avocados and add to food processor. Melt the chips (I used the microwave) Add the melted chocolate, cocoa powder, agave and vanilla to the food processor. Puree until smooth. Portion into 3 or 4 small dessert cups. Chill.
I served with a dollop of coconut milk yogurt and fresh strawberries. Yum!!
You cannot tell it's made with avocado. It's is extremely rich. Next time I'm going to try a recipe without the melted chocolate for less sugar and fat.
