I'm not sure where to post the weekly recipe to participate in the team challenge. So here it is until someone tells me where it should be. ;)
Today I made the Basic Biscuits from the Wheat Belly Cookbook.
1 cup almond meal/flour
1 cup ground golden flaxseed
4 t baking powder
4 T cold butter
4 egg whites (I substituted 2 whole eggs)
Mix dry ingredients. Cut in butter. The recipe suggests whipping the egg whites, but since I used whole eggs I just beat them lightly with a fork and mixed them into the flour mixture. Divide into 8 portions on parchment lined baking pan. Flatten each biscuit.
Bake at 350 degress for 15 minutes.
Note: I used a Whoopie Pie pan greased with coconut oil.
So quick and easy!!! Very tasty!!! And packs a great dose of fiber.
