I really like Hodgson Mils Cornbread mix. It really holds together well and is very tasty.

I've used some of Bob's Red Mill products, like some, not so much others. I wasn't excited about their corn bread or bread mixes, but I love their gluten free oats. Excellent quality.

Yikes! I'm so sorry corn affected you so badly. Definitely something for you to avoid. Do you carry an EpiPen in case you accidentally eat corn?

I baked corn bread using a mix from Nuts.com. It is easily the BEST gluten free corn bread I've ever eaten. I used low fat milk, safflower oil and free range (truly free range!) eggs to add to the mix. Lovely results. 120 calories per serving, and half a gram of fat, so it can easily replace toast at breakfast, or accompany a bowl of soup.

I also bought their whole grain gluten free bread mix, but haven't baked with it yet.
