Dorothy continued prayers for you DH.

We had a good time at our DD's and welcoming a new baby grand daughter to the family on the 18th.

I have been busy in the kitchen all day with food prep for tomorrow. I am not doing dinner but going to a friends home and taking several things. Looking forward to the time there. It won't be the same as having my own family but a close second.

He got a MRI of his brain and neck today and we will know what is going on if any thing in his brain or neck, Need a good report and no cancer in the brain or neck. Need prayers for that.
They will be starting a new treatment because this one is not working and he will start it the week of Christmas and it will go about three weeks and one week off. He only has to go two days of the week but still has to have his blood checked because the chemo kills the red and white along with the platelets

Just checking in to see what is going on, not much it looks like. I have been super busy the past few days. Getting ready to leave town for a week to go to our DD's for an early Christmas and welcome the new baby which will be here on the 18th. Can't wait to meet the new grand daughter That will make 3 grand daughters and 2 grandsons. We will be gone about a week.

Barb, I haven't tried those pans, but sure have thought about it with a home made flour tortilla.

Hope everyone is staying warm. We had a few super cold days, but back in the mid 60's for the next few days.

Cookie exchange is over. I ended up making a cookie with a gluten free flour mix. It was the first time for this recipe and I think the flour portion was misprinted. I did it again with double the flour and it turned out OK. Has anyone tried the tortilla pans to make the fluted corn flour bowls? I have the pans, but haven't tried them yet. Someone on another team said she just loves them.

the starch is to prevent caking and improve thickening (which is important in icing/frosting). you can do it w/o the starch, though...just run it thru a blender or coffee grinder.

never heard that powder sugar is also made with wheat. I do know that they take the granulated sugar and pulverized it until it is very fine.

dorothy--you can replace arrowroot or tapioca starch for corn starch. i don't eat corn or potato, so most pre-made mixes don't work for me. i read you can make your own powdered sugar by blending sugar and tapioca starch. hang in there!

Could you share your recipe? I signed up at church for a cookie exchange and I would like to make something no one else is taking and still be gluten free. Pastor's wife is making a gluten free peanut butter cookie (I think), Pastor is gluten sensitive. The one I looked at took potato starch and I don't usually use that. I use tapioca flour and guar gum for thickening in baking.

I make a flourless chocolate cookie that is so good. It is a copy cat recipe from the one that is made from the Great American cookie. They are super easy to make and good.

I think I am getting a cold. I am planning on steam cleaning my living room and hall way carpet this AM. I hope my elbow holds out. For some reason it hurts.

Just a quick hi and to see if I am missing much. Since Nov. 12 I have been too busy to be on the computer much, but now with things getting back to a normal, I have a little more time to be on.

Can't believe Christmas is around the corner. Not putting up any decorations this year as no one will be around. We will be leaving the 16 to go help out at our oldest dd as she will be having a c-section on the 18th. She is expecting their second girl. They have one boy 4 already.

I had planned on getting back to tracking today, but brain wouldn't go there, so hopefully tomorrow will be better.

When I was in Durango, Co this past summer I had my first GF crepe and it was so good. We had a dessert one and was going back the next day for a savory one but they were closed. I hope someday to learn and make them.

Dorothy, there is a gluten free crepe recipe here on Spark People that uses a gluten free flour mix. It is very similar to what I made, but I used coconut oil instead of olive oil.

Have to find the coconut one. I'll get back to you -- if I can remember!

We have had lots of rain and wind, but we still have our power. More rain coming. The worst is over now for us here in SCW PA. Hubby works at public school where they had a leak and now they have a mess to clean up. Hopefully, it can be repaired before the next wave of rain comes in tonight.

Made some coconut flour brownies on Friday for a family dinner. Hubby liked them so I may make them again to curb his sweet tooth and wheat problem.

DH is wheat sensitive and he won't eat it. I do, though. I also get the real stuff sometimes, but not often. I do not have wheat problems, but since it is just the two of us, I usually have what he has except for the crab, he doesn't like it. If we could curb his sweet tooth -- even the candy he likes -- he would probably do a lot better.

Glad you mentioned the wheat aspect in imitation crab here for those who absolutely can't have any wheat/gluten.

Barb 1, when I need to increase protein, I use a protein shake. I have found a pea protein that I like. I also use imitation crab in salads as well as chickpeas for fiber and protein. It is hard to get the protein in, but I have noticed that when I add red meat, which I don't do often because I don't care to, the protein adds up easily, but so does the fat. Sometimes this is very frustrating! emoticon

Donna- how is the dad of your daughters friend doing?

Note on losing weight on gluten free...I have found that increasing fiber seems to make a difference and agree that to many carbs and I gain weight too. Like your idea to increase protein but have a hard time doing that without increasing calories. Could you give me some examples of how you increase your protein and not go over your calories for the day??

I had cut out most grains and all sugars. Then I added lots of veggies and dairy along with meats. I lost the weight that way but now that I added back most of the grains and dried beans, I am gaining the weight back.

Dorothy, what stuff will you cut out? I use to have small breakfasts and a lot of sour things throughout the day and seemed to maintain weight. Just this week I started doing the small breakfasts again and lost the two pounds I gained last week. So, I am still maintaining, according to the scale. Now I have to figure out how to lose and keep it off. When I cut the carbs suggested for me, and do more protein--which I have trouble getting in--that seems to help, too.

Hope we both find what really works for us. emoticon

Good morning, All!

Was at the local BiLo yesterday and found a Betty Crocker gluten free brownie mix. Hubby really likes brownies, with walnuts, of course. I made a gluten free carb blocking brownie from scratch last week and he seemed to like it ,too. I used real chocolate cocao bits. Not as sweet as regular brownies, but better for him. Oh, I got the recipe from a magazine.

Donna -- Sorry to hear about the sadness of your DD's friends.

Going to chiropractor tomorrow to get adjusted. I think something may be out from the fall.
Going to a funeral Thursday. A good friend's Dad passed away.
Going to a ladies' retreat Friday, Saturday.

Prayer request. Do you remember a friend of my DD whose husband was killed in a motorcycle accident. Well her father was in a motor cycle accident this morning and is in critical condition. He also wasn't wearing a helmet. So sad.
I know they would appreciate our prayers.

Good morning team!

Rained most of the night here.

Recovering from the fall I took on Saturday before the craft/soup/sandwich day the the church. The cut above my eye is healing nicely. I am sure the reddish/purplish color around the eye won't last too long. Just a little sore.

One good thing, though, a lady from the church made a gluten free pineapple cake for the sale. Pastor and DH are both wheat sensitive. All in all it was a cold, but lovely day. Not a good turnout, but that's OK.

Hope your visit with your sister was a great one and that was great she got to see the new bundle of joy. I totally agree with Dororthy and Barb do, do your homework on the doctor that will be doing your surgery these days you can never be too careful plus recovery is long and you will need help. My prayers are with you doll.

I agree with Dorothy, Donna...make sure you have your knee surgery done by a doctor that does a lot of them and at a hospital that does a lot too. My girlfriend had her knee surgery done 2 years ago and it takes a lot of recovery time. She needed someone to stay with her and drive her to her physical therapy appointments and it took a lot of work to recover. She was told to use an exercise bike and purchased one for during her recovery. She really researched her doctor and has had a very successful knee replacement process.

Donna make sure that you research it before you get it done and also talk to people that had it done and find out how they like it and who the doctor was..; I will tell you one thing and that is to get in the best shape before you get it done because it makes it easier to heal faster and get back to walking too. I talked to allot of people who had it done and I only came across two people that were dissatisfied with their knee replacement. One was very over weight and did not lose any weight to help strengthen the knee before getting it done, the other has a bad doctor that did not do a good job and she got an infection in the knee. So research it and if you are hesitant able talking about it just look at the knees and you will see the scar that is long and then just tell them that you are thinking about having it done and they will be happy to tell you about what they went through and how they like it or did not like it. Just ask

Maria, my sister is still here. She came for an extended visit of almost 6 weeks. I take her back to the airport on the 22. Mostly I have just taken her to see my DD's which she hasn't seen for 7 years. We saw my oldest dd's family last weekend and next weekend we will head to my youngest dd. It has been good to have her here, especially on cleaning days. LOL

That is great news that the family is doing so well. Did you enjoy the visit with your sister? Were you able to do anything special while she in town? I am so sorry to hear your knee is still a problem for you, I will continue praying for you. I am happy that brace is helping at least some.

Yes he is doing better and the cancer seems to be going down in his leg. He is even walking more and he is now trying to walk without the walker too. Still no feeling but he is able to walk, it is slow but now I can at least keep up with him now.

Maria, dd is doing good and so is the new baby. My DH hasn't seen the new one and with my sister visiting we are going up to see them next week for several days.

My knee is still a problem, but I had a special brace made which has made things a lot better. I still need it replaced but don't know when I will do it at this point.

Hello ladies,
Been really swamped and going through so much, it's like it is never ending! :( But I am rejoicing in each and every day b/c the Lord has madeth those days. I am getting over food posioning, and then 3 people quit at work which means more work for all of us. Honestly, I have never been looking forward to a new year as much as I am looking forward to 2013!
