Thanks Nancy, I decided to send my recipe to Authenic to see if I would get a reply and they said I would only need 1/4 t. of xanthan gum. I have found if you use a different flour for recipes on packages you don't get the same result. I was very disappointed to use the better batter flour in my banana bread and got a poor result. Very odd taste. I did book mark the recipe so thanks.

Do any of you have a good banana bread recipe using the Authenic classic blend flour? I have a bunch of flour that I need to start using. I have lots of desserts but no quick breads. I have a favorite recipe that I like for my banana bread but found it doesn't work with that flour. Maybe the problem is how much xanthan gum to use. Too much or too little causes problems.
