it could be coincidence or it might not be. My understanding is that Wal-mart is good about marking their foods, I don't shop there for various reasons so can't verify. It could be the filters. Do you have the itchiness when you get brewed coffee elsewhere, like McDonald's or coffee shops, or friends houses? I thought some instants were safe, but would have to check.
Also it might not be the wheat allergy causing you to itch, it could be something like the chemicals in the coffee or who knows.
