I still think its odd/interesting that I'm wanting other foods and things that I previously hated now that I'm gluten free. Also not eating or very little some of my former wants. I used to not be able to keep enough sour cream, and recently found an unopened carton in the back of the fridge that expired in May.

Most cravings are actually based on your body needing vitamins and minerals that we are lacking. If you have Celiac Disease or even a wheat allergy, your body is not absorbing nutrients that you need and you well crave items that have those nutrients in it. Once you are healed after going gluten free your body should stop craving some of those things you craved before and your tastes will change because your body is getting more of what you need. Your chemical balance changes and thus your ability to taste foods differently then you did before. This is something that is real common with people under cancer treatment but it applies to anyone who's body is changing.
As for pickle cravings, I've read that its commonly not the actual pickle we're after, but the vinegar its pickled in. I guess pickles are a good source of electrolytes and some other mineraly stuff....
My taste buds have also changed since going GF, although I'm hesitant to tie the two together. I can now eat beans and I have a thing for bell peppers; pizza always sounds like a good idea, but I'm never excited by the taste, my once carnivorous diet is now pretty much meatless (the occasional can of tuna still makes its way in sometimes).
I have only been GF for 2months or so, but my taste buds are changing. I am not sure if it is being GF specifically or just that I have given up baked goods considerably. I have started eating whole unprocessed foods, beans, rice, smaller amts of meat, fish, lots of veggies, and fresh fruit.
I really don't miss the pizza, cake, goodies, etc..and crave better healthier foods. I am also much more content w/vegetable protein over meat for most meals. That has been a bit of a surprise for me as beans and rice never did much for me before!! lol
I don't know if my taste buds are going through a natural change or if its my healing body allowing other cravings to come through. I have noticed that my food wants/cravings have changed lately. I went GF last fall. There are foods that I didn't like before or were indifferent to I want or crave now. I used to crave meat constantly before and now its - ehh
Has anyone else noticed a difference in their food cravings after going GF?
