Thank you for the suggestion of using the agave nectar, as well as the reduction in butter.

I was thrilled when I first discovered gluten free goodies, like cake. However; I also discovered how much sugar was in the mixes. Sugar causes my fibromyalgia to flare up so most of the goodies went bye bye. I took a few recipes for gf brownies and worked until I came up with one that was sugar free (I used stevia and agave nectar). It tastes pretty good, but is still fattening. Way less fattening than the original recipe (called for 1/2C butter & 1.5C agave - I use 4T butter, 4T coconut oil & .5C agave) but mine is still high in calories. I make a batch, cut it into little pieces and freeze it for when I have to have chocolate.

We ladies know, there are just times you need chocolate.

I have read that both medications and vitamins can tend to make the body more acidic which causes weight gain. The body requires more water to help dilute the acid. I haven't jumped on the Ph bandwagon yet, butI do know that lots of 'green foods' tend to make you healthy and also help to alkalize the body.

As soon as I get extra spending money I am going to start taking chlorophyll again. Years ago I use to take lots just in order to detoxify the body. I discovered that once you reach a certain level you have no more body odor. You don't need deodrant because no matter how much you sweat you don't stink!

Nothing you do gets stinky! It takes a pretty good amount of chlorophyll taken over an extended period of time to achieve this though. I did not have a weight problem back then so I can't say whether the alkalizing effect of the chlorophyll affected my weight or not. I am tempted to try again though and see if it helps me to lose weight.

I never take my vitamins and/or herbs at the same time I take my medications. You always need to be aware of the potential hazard of interactions when you do so.

I was on so many medications that made me gain weight to control the pain I was in, they thought I had fibromyalgia and everything else, so when I got off of that I started to loose some weight but then I found out I could eat without feeling miserable, and there were all these goodies out there that people made just for me! Well I just had to try them! But let's face it a lot of those GF goodies aren't the healthiest, so that little bit of weight I lost came right back.
I had to realize those gf goodies weren't made just for me and I didn't need to keep all those guys in business. So now I'm much picker about the goodies I eat, and I eat a much healthier GF diet. And I've lost a number of pounds, but now they just stopped. I'm kinda stuck.
I'm still on some medications that mess with your system and I think that is messing with me now. But I'm still trying to loose the last 15 to 20 pounds.

My weight remained the same, which bummed me out. I just got the results from my saliva test back and I have adrenal fatigue (knew it!)and all of my hormones are out of balance and way low. I plan to call a local doctor tomorrow.

I am also hypothyroid, which many of us are also gluten sensitive. According to celiac site allergy to gluten causes many cases of autoimmune hypothyroidism. I am on med's, but without adrenal hormones thyroid med's don't really work. I am hoping that I can get my hormones balanced and then the weight will come off, the fibromyalgia will go away, as will the chronic fatigue.

Does anyone else have problems with their thyroid?

I gained-I started eating things I didn't eat before. I started to eat sweets which was never a problem before. I feel much better being GF but losing the weight is really difficult. I also have the feeling deprived issue.

I have never been officially dx. with Celiac. However, through the AK that I see, I found out I was intolerant to wheat. When I eat wheat products I am tired, achy, and have fibromylgia symptoms. When I am off wheat I don't have those symptoms although it takes about 2 weeks for me to feel the difference. I also lose weight pretty quickly when I take myself off wheat.

You could be feeling that way because you are detoxing your body. When you rid your body of things it is intolerant to, it is normal to feel the way that you do. Keep doing it and I bet you will see huge improvements!

I had the Celiac Panel first which was inconclusive followed by a biopsy of the intestine which showed the damage of the Villi which is indicative of Celiac Disease. This was all covered by the insurance. All the other tests were done at an allergists office. They started with the general tests on the back and then expanded on that with tests on my arms for individual allergens. This also was paid by the insurance.

The doctor who had me do the food elimination test which was about 25-30 years ago was also an allergist. I do not know if that test is standard anymore because I never hear anyone mention doing it. They just talk about the elimination diet but never mention how to know if the body is reacting to it.

I know what you mean about not feeling well if you fast. All three of my daughters have reactions if they do not eat. Jenny will have fainting spells if she goes six hours with out eating. She has been tested for diabetes but they say she does not have it but her blood sugars drop very low if she does not eat. All three of them get really bad headaches and fatigue if they skip meals. They are sopposed to be in a fund raiser next month where they are supposed to fast for 24 hours to raise money for the homeless. I do not want them to do this because I know what it will do to them.

You are a wealth of information! Thank you so much, I really appreciate it. I feel like I am searching in the dark. I will try monitoring my pulse, I didn't think of that, and this the first I have seen/heard it suggested. I don't know that I would want or be able to fast for 24 hours. I get kind of dizzy and sick when I don't eat.

When you had the tests done, do you remember what kind of tests they were and if insurance covered them? I have heard of the ALCAT, but my understanding is that it is not covered by insurance and it is really expensive! The full test is $1100.

I know when my doctor had me do a restriction diet. He had me take my pulse after eating a new food. It was right after, five minutes, thirty minutes, one hour and three hours. The theory was that if you reacted to the food you might night feel a difference but you body might still have a reaction. I remember having to fast for 24 hours and then I was only allowed to eat one item such as a boiled egg. Then wait about four hours before I could eat anything else. It was a very hard test to do. I was told to only eat pure foods. I slice of white bread was out for the testing. It was things like egg, milk, cheese, fruit, oatmeal, cream of wheat, etc. to find what I would react to. Latter the complex foods were added in. To be honest I really did not find myself reacting to anything other then the milk. At that time the wheat and oats did not cause a heart beat increase. So I found it really was inconclusive. It was much different when I was tested for celiac and then also had comprehensive allergy testing to find if I was allergic to anything which at the time showed I reacted to a lot of things. So I had better results have real testing done then using the restricted food test.

Thanks for the info. I have been pretty strict since I started on the 12th and haven't had any processed foods, no salt, sugar, dairy, gluten, etc. I've really been craving sweets, which is unusual for me, so I think a lot of my pain is withdrawals from the "good stuff"! I'm somewhat nervous about adding things back into my diet, because I don't know if I will see the signs of a sensitivity or problem.

Charissa, It actually took me several months before I started feeling better. Because I was not fully aware of what all had gluten in it I was still eating things like soy sauce and not giving it a second thought it took longer then it should have.

I do not remember feeling worse when I first went on the diet but have heard some people say that they did. Also if you removed all carbs from your diet that is a normal thing. The Atkins diet is notorious for that.

You are doing good though to lose 9 pounds in just eight days. I hope you can figure out what it actually is that you are reacting to.Some times it is difficult.

I have been gluten and dairy free for 8 days and so far I have lost 9 lbs. It's encouraging. I haven't been diagnosed with anything, just trying to figure it out by cutting out foods and then adding them back in slowly and seeing what happens. When you first stopped eating gluten (or anything else) did you feel terrible for the first week or so, or were you instantly better? I feel tired, achy and sick to my stomach. Also, the whole reason for doing this is I have daily headaches, but they have been really bad since I started this. No pain, no gain right?

When I first went gluten free I gained weight. I was very underweight at the time. I was at 125 and I should have been at 155. I went beyond that but because I was very active I was able to maintain it at 165. Ten pounds higher then my doctor wanted me to be at. After I stopped working it went way up and now it is a lot of work to get it back down.

How I wish I would have lost weight!! Maybe thats yet to come - 3 weeks gluten free and I gained 6 lbs. However, I also dropped my calorie intake so wondering if the combination caused the 180.

I wasn't officially diagnosed with Celiac-I don't have the money for the testing, but I found out accidentally by doing the Atkins Diet that I am gluten intolerant for whatever reason. I have been overweight since my first child was born, but got even heavier after the 2nd child. I've had many health concerns that have gotten in the way of exercising.

For me, just avoiding gluten wasn't enough. Through some food challenges, I found out I am also intolerant of dairy. Now that I have dropped both of them-just in the past week I have dropped almost 2#'s which is amazing since I haven't lost any weight in years-despite all my hard work.

This week I am challenging myself to avoid all grains, most processed stuff, sweets-unless it is fruit, no dairy products whatsoever. It seems to be working. I feel much better than I have in a long time.

Good luck to everyone coping with gluten intolerance.

Good question. No doctor could ever explain my weight gain that started all of the sudden in my early 20's. After going GF I lost 4 sizes and have sort of stopped at a size 16. Now I need to get to work to lose more.

Since Celiac manifests itself in so many different ways it causes some people extreme weight gains or losses. What happened in your case? How are you overcoming the issue?
