I agree with Bluejay that the Bob's Redd Mill All Purpose Flour is the best. They also have a great bread mix. With my experience the flour mixes that have sorghum in them are the best. I am not real fond of the traditional rice, potato, tapioca mixes - to me they make baked goods that are pasty. I remember when I first went on the diet I went to a health food store and the girl said that the rice bread was wonderful. Got home and made a sandwich with the bread right out of the package and it tasted like Elmer glue. That girl must have been one of those kids in the 1st grade class that sat there and ate the glue right out of the bottle. Make sure to toast purchased breads before you eat them. Brown rice, amaranth, flax and sorghum all add whole grain benefits to the mixes. Bean flours add protein.

SHELLYSHOCKED you might want to start out using a premixed gluten-free flour like Bob's Red Mill Gluten-Free All Purpose Baking Flour or Domata. I use both of these and find that they substitute for regular wheat flour nicely in most of my recipes. I found some good flour mix recipes in Bette Hagman's The Gluten-Free Gourmet cookbooks too.

No, to be truthful, I havent done any real baking yet. Guess I'm to confused to even start. I have just used some mixes that say with 'brown rice flour.' It just seems to confusing to have to use several different things, none of which I have in my pantry. What should I have in my pantry? What kinds of flours are the best? What blends work best together? I have basically just given up any breads unless I get desperate enough to toast some of my frozen premade tapioca loaf, which isnt that often because it isnt that great.
I guess you could say I need some help. emoticon

I was also a heave dairy user. It was hard to go with out cheese for the six months. But it allowed me to heal better, faster. I still use rice milk in place of regular milk when I eat my morning gluten free cereal.

Shelly, I do not know if I mentioned this to you. When my doctor first dignosed me she also said to go Lactose free because lactose can cause similar problems and can be hard to digest. After six months I was allowed to add dairy back into my diet with out haveing problems with anything except milk which I still bloat up with when I drink it. But if it is cooked into something it does not bother me.

Thanks Judy, my face already looks thinner. When I think about all the years I have put up with all these crazy symptoms it makes me want to scream!
I did look online for Celiac support groups and the closest is in Kansas City at 3 hours away. I thought I would ask at the health food stores if they know of anything around here.

Shelly--The whole GF thing is overwhelming at first. It does get easier once you have found a base of products that you trust and have on hand. For now, it might help to stick to basic foods and eliminate convenience foods as much as possible, since you might be reacting to additives as well. For yogurt I guy plain LF yogurt and add a tablespoon of simple preserves or fruit sauce (like Bon Maman), or fruit (canned or fresh), nuts and honey. I buy the yogurt in the bigger containers so I save $$ too.

I found that the wheat definitely made me gain weight and look bloaty. I am very happy with the way my body responded to being gluten-free. Good luck!

If made in the USA or Canada it has to have an allergy notice if it is made with wheat. It is very rare to find that it is made with wheat but it will always have that notice if it is. Make sure not to buy products produced in other countries though. For instance if the product comes form Italy it is most likely wheat based. So you need to know the origin of the product before you can be sure.

I learned at a celiac education class, most modified food starch in the US is corn, although you can't be sure unless it states what type of food starch is in the product. I usually avoid something unless it is stated clearly. I thought a law was passed that food labels had to be specific but they aren't.

I have a question. Does anyone know if modified food starch is on the yes or no list? I have a book that list things to look out for and it was on the 'dont eat' list. But my gluten free yogurt has 'food starch-modified' on its list of ingredients. This is so confusing. Does it ever get any easier?
I was officially diagnosed with celiac disease at my doctors appt on Monday. She told me about alot of different things it effects like exhaustion, lack of concentration, puffiness in my face - that I had no idea about.
I also seen where people have trouble not being able to gain weight yet I am the total opposite and have had trouble losing. Is there any other odd things I should know?

Appleebees has been the absolutly worst restaurant and getting through the gluten free diet. Last time I went we checked on line and there where two items I could eat. The actual restaurant confirmed this. I was very pleased with what I got but was very disappointed with the selection.

Good health to you Auntouch.
I was just reading through this discussion and wanted to add my comment on Applebee's. Since Applebee's was my favorite place to eat out I went there after being diagnosed with celiac 2 1/2 years ago. When I told the wait person that I wanted a steak with no marinade or spices, she looked at me like I was from outer space. Then a manager came to my table and told me that all of their foods come pre packaged with the marinade and spices and there is no way for them to tell if there is gluten in them or not so they would prefer not to serve me. So I left and went over to Outback. They had a gluten free menu and the chef came out and talked to me to make sure I got what I needed. What a difference in service! Since then I go to Outback for steaks and PF Chang's for Chinese food. Ask for the Gluten-Free menu. Also, Chili's has a gluten-free menu.

i have been gone from this site for a while and really miss chec king in and seeing how everyone is doing. I have been having some health issues and haven't been exercsing like I should. I have a pulmonary embolism that they found last sunday. so I am kindof restricted to what I can do. am having to wear oxygen at home now. hope that will change but time will tell.

Cornstarch is corn starch. Right! I use a lot of cornstarch in my gluten free baking. I usually buy it in five pound containers. On Tuesday my wife wanted biscuits so I went to get the ingredients to make them and did not have enough cornstarch so I ran down to the market and got some. I have never seen anything except cornstarch on an ingredient box of cornstarch so I grabbed the cheapest brand which was an off brand made in Mexico. Soon after dinner I started having some stomach problems and went and looked at the label of the cornstarch and it said Contains Wheat. It was not in the ingredients but in the allergy notice. Why the heck would there be wheat in cornstarch? Well I suffered for my lapse of diligence in reading labels of everything I buy. So be warned. Be delegate and do not slip up. It is no fun. Now I have lost my challenge for this month. It happens to the best of us.

I'm proud to say that I have reached my 8 week mark of being GF!! emoticon

It hasn't been easy (like yesterday when everyone at work was eating cupcakes for a co-worker birthday) but very worth it. I dropped 11lbs, my skin is rash free, I'm not gassy and bloated. BMs not there yet but hopefully soon.

Yes, A one in the box means that you were gluten free that day. A 0 or just not clicking the box means that you were not gluten free. Another option is to add a 7 on the last day. Some people have been doing that.

I have stayed gluten-free today. Actually, I have been at a Cancer Treatment Center and the cooks have been great seeing that what I am eating has been Gluten-Free. I am home for two weeks before I go again but I honestly appreciated them doing that. The Catina (I live in Arizona so they call it a Catina) at the Center does have a lot of gluten-free foods. I found out that all their soups are gluten-free. I am also finding out that there are more and more people who cannot have gluten. So far I have stayed gluten-free. It is hard though at times, I have to admit. Well, I hope everyone had a really great Sunday!

It is hard to participate in the activities when they involve food. I always have a left out feeling. Until recently I just would not go. I had turned myself into a recluse. I have finally come to the attitude that it is better to go and socialize and ignore the fact that I can not eat what the others are eating. I know it is hard to not eat what they are eating. We went out for pizza last week and I just had a salad. But the place we went to has a decent salad bar so it really was not that bad.

Congratulations on getting through the week. It really is difficult not to get "glutened" once in awhile. We have a valentines dinner Monday night at an Italian Restaurant I really get frustrated paying for a meal I can't eat. While everyone else will eat pasta, I get to eat a side salad and have something to drink. The meal is pre planned for the group. I just want to see the ventriloquist. They are trying to figure something else out for me. I may take my own meal. I have gained weight since becoming celiac. I tend to replace the wheat with sweets, something I didn't eat before. Staying GF is definitely a challenge but I feel so much better. Have a good weekend!

I made it another week without any problems. I sure regretted it when I ate out on the forth and got cross contaminated. I was lucky that the symptoms only lasted one day instead of a week like normal. I hope you all have been doing good.

Keryn, I have found that it is best to just do your own thing with the menu. The present menu plan is not very adaptable. It takes a lot when you first start imputing the foods but after awhile you will have them all their so you can just add a them from your favorite list.

Going out to eat or eating at other peoples houses is always a challenge. I went to a pot luck two weeks ago and there was very little that I could eat. Mostly had salads. Everything else had was wheat based. I feared that I would be glutened but I did not have a reaction. I really enjoy the socializing but fear the eating part of a pot luck.

I have to admit that I was glutened on Friday. I have been eating at Carl's Jr. at least once a month for about eight years. I always get the "low carb style" burger and have up to this point never had a problem. This time my burger came all jumbled and not very well rapped and I had to eat it with a fork and knife. I often do not have problems till the next day but on Saturday I woke up with an upset stomach, cramping and then the big D. I know for sure that my burger had been contaminated somehow.

Hi everybody, I am relatively new to this site and it is the first time I have posted. I am always gluten-free and if there is nothing that I can eat, I don't eat! Even the best intentions of hosts can sometimes go wrong though and I sometimes accidentally eat gluten, but never by choice. The consequences are just too dire! By the way, how does everybody go with the menu plans on this site, is there any way they can be changed to gluten free?

Ummm! You are making me hungry. I went the whole week with out a problem. Even at my wife's sister in laws birthday party where there was nothing that I could eat. I was tempted to eat something but held out tell we got home. Social gatherings can be so hard because there is so little there that we can eat. Tonight is a church potluck. I love to go but am so afraid to eat the food. Last one I went to I asked about every dish that wasnt obvious. One dish was a chicken and rice casserole and when I asked about it they said it was safe. Sorry I'm not more active here but I am a bookkeeper and this is a busy time of year. Hopefully I will have all the year end stuff done this week.

The last week has been great, I am down 2 more pounds. I was able to pass up all the pot luck goodies at our star meeting on Monday. I just wish I could find something differnt to eat.
chicken strips, rotisserie chicken, steak Umms, hamburgers on the foreman grill, tacos, steak when I can afford it.
Tonight I am going to try sauteeing chicken strips with spinach and garlic and have them with Polenta and some chunky tomato sauce over all.Sounds yummy but we'll see.

Grammy Pat. I hope that small taste did not cause you any problems. It is hard not to do that. I am the only one that is gluten free in our house so there is always a chance for me to get some contamination. I have told every one that their are two areas that I would like to remain free of contamination but it never works out. Just yesterday I caught our oldest daughter making a sandwich on the area I usually do the food prep at.

And WHOOPS again. I had to make a pot luck for my husbands lodhe meeting and without even thinking tasted it to make sure it was seasoned right. It had elbow macaroni and shredded cheese in it. Just a tiny taste but it was just a habit.

I thought Coffee mate was dairy free also! It is lactose free but does contain sodium caseinate which is casein and is what I am allergic to. Casein is what is in cheese, milk, butter etc, I am not supposed to have coffee either becasue of the acid. Coffee and any soda makes it hard for the inflammation to heal. So I was giving myself a double whammy.
But how wonderful it is to have a doctor who actually listens and helps me figure out what I need.

Grammypat, Ragu is gluten free but not dairy free as you found out.

I never thought of the Coffeemate as containing dairy. When I was first diagnosed with CD I was told to also be dairy free. I have always used Coffeemate and never thought of looking at the ingredients for dairy but only for gluten. After all it is labeled as a dairy free product. So why then does it contain dairy? I am glad that I do not have to avoid dairy anymore. It made the diet so difficult. But I still have to limit the amount of dairy I eat or it does bother me. I can really feel for you having to suffer from gluten and dairy.

Does anyone know if Ragu is gluten free? I used it yesterday but then read the label (dumb)and found out it had romano cheese in it. I can't have dairy so that was a nono. I have been sick for a couple of days but have been staying on plan and couldn't find the culprit.
Today the guys at work were teasing me about my Hazlenut Coffee Mate. I was showing them it had no gluten in it and then realized it has sodium caseinate! I read the label before and saw lactose free and never thought about it. So I have been using it for a couple of weeks.Could just this little bit of milk product make me this sick?
I am very discouraged today. I have not lost in 3 weeks, feeling like crap and all becasue of coffee creamer!

I have stayed gluten-free. I am finding more resturants around here in Arizona have gluten-free menus and if they don't they will work with me. We don't go out as often as we used to but we do like going out. Today I am going to see if my hubby will go to the Gluten-Free Pizza place, I feel like getting their baked chicken wings with gluten-free hot sauce and one of their salads.

Sorry I was not to active. The Holiday season was just really busy this year. Now that the kids are all teenagers they want to do a lot. Small kids were so easy to entertain. Now they want to go, go, go and all the time. I just did not have much time for myself and going on the computer.

Well! Anyway, I made it through the holidays and this week without any gluten showing up in my diet.

Clov3r, sorry for some reason I belive everyone on here is in the USA.... Where exactly are you at?
Anyway, the only thing I know for sure is that they do put gluten in some spices but is never labled as such.. and the only other thing I know for sure is
that Gluten is a preservative...usually formed when water is added to it.
Google it... or go on Celiac.com
I have yet to see a spice that says it has gluten in it or any other ingredient that I would recognize as gluten...
It's hard to help when the USA carries different products that the UK.
It is nice to be on here so that we can make new friends from all over the world however.
I wish I knew where everyone went.. like Swimlover and Otterdotter, 1grnthmb showed up here finally..

Anyway, have a beautiful day. I know have been Gluten free for 6 days now.... I work out at the least 5 times a week.
I have my 30 year coming up in July and I must get this 40 pounds off..
I also have a date Saturday.. I hope it goes well.
I don't have much luck here with men.

Yeah, I normally dont eat pre-prepared foods, this was supposed to be a "Treat" and what a treat it was - anyway - all under the bridge now.
Annette, the other thing is, it was a local (UK) brand - dont even think it was from a large group, so i doubt I would even find it if I had to go out and look for it!
For some reason, I think I'm getting more sensitive to stuff. Even some spices now affect me - dont know what they put in it! especially the "Ground" type, by the looks of it.
Back to cooking from scratch - I tried my very first "puff pastry" and it was everything but Puff! It was more like a crust! Dunno what went wrong on that one - Problem is, I have noo idea what the dough should feel like before baking - it's almost like the dough did not have enough fat/oil or something in it - oh and it tasted like NOTHING! hehe yes, i did taste it! Any ideas anyone?

I have found that a lot of the BBQ sauses are safe. Most of the Kraft ar but not all of them. Also two of the Cattleman's are safe but there is one that isn't. I usually make my own.

Just trying to help... didn't know you had a packet?
do you even remember the name of it?
Sometimes it has spices in it which contain gluten and depending how sensitive you are it could be the carmel color... just a thought.

There aren't too many bbq sauces that are gluten free. Sweet Baby Ray's is and it is awesome.

We had "Ribs". probably marinated with some other spice or something! The lable did not have allergy warning on it, but also did not list anything that looked fishy. - must be the spices.
Well, once again, that will teach me - never to eat something out of a packet!!! 1st time in 3 years, and I will probably sulk for the next week to get it out of my system.

Something somewhere were wheated yesterday!! dunno what or where, but I had a "Falling asleep spell" half hour after eating lunch! and felt really grotty after "waking".
I wish the docs would try and find out what makes me so sick!!

Kudos to everyone for a job well done...
I am now on day for of no gluten and over 2 weeks of exercise everyday. Yesterday I over did it on the wine because I was just having a bad day..but today my dessert is a slimfast smoothie...very satisfying.
