I'm sorry I missed this thread before Thanksgiving. I love to cook and had a totally GF meal, including gravy, stuffing and pie.
For those of you who are wondering how to do gravy, just substitute sweet rice flour or cornstarch for the flour in your gravy recipe and make it the same way. Rice flour doesn't lump and I like it better than regular gravy.
For stuffing I make homemade cornbread, cut it in cubes and dry it and make a cornbread stuffing. I also cube and dry a loaf of Ener-G brown rice bread and mix it in. The rice bread tastes gross by itself, but it actually makes good stuffing with the cornbread.
I use my regular pie crust recipe and sub my gluten free flour for the regular flour. My recipe calls for 1/2 C of shortening or butter for every cup of flour and this seems to work better than the recipe with less fat.
I'm dairy free too and use coconut milk in place of evaporated milk in pumpkin pie.
For rolls we use Pamela's wheat free bread mix baked in muffin tins - yummy!

I've posted about the awesome bakery with amazing gf bread before, well they make croutons too. I used their croutons to make a wonderful stuffing! With spicy pork sausage, chicken stock (swanson's all natural), celery, onions, a bottle of New Grist gf beer, a diced apple, and dried cranberries. Yum!
We made gravy from the turkey drippings, added a little cornstarch and some chicken stock. It turned out really good.
For my first gf Thanksgiving it was great! I didn't miss a thing. We even had pumpkin pie, both with a gf crust and a crustless version.

I've had a lot of luck with this cookbook because so few of the recipes depend on flour or in such small amounts that I can use a gf baking mix. I use a gf baking mix in place of the flour in the lemon custard cakes and it works rather nicely.
Hi all! Thanksgiving is a hard time for us gf folks. I'm hosting this year so I have more control over what will be served. I plan on making: -turkey -roasted sweet potatoes -roasted brussel sprouts -mashed potatoes -simple green salad -pumpkin pie (with crust for everyone else) -lemon custard cake (gf for ME ALL FOR ME!!!! Just kidding. I'll share.)
So that's like a TON of food, right? But I'm stuck on two things: stuffing and gravy. Do any of you have any good tried and true gf recipes for either of those things? I made a rice stuffing once that was darn tasty...
