Mark, I totally agree with you!! Every time I want to take a bite of something "illegal", I think back, and luckily my hubby is there to keep reminding me how sick I was the last time I had some "Bad Stuff".

I think, after a while it becomes like second nature to first make sure that the ingredients are good if you buy anything pre-packed / pre-made.

I Find it therefore easier to cook and make everything myself. Yes it takes time and effort, but surely worth it!!!

Hi Renee.
It is so hard to stay with the diet at first. But after you feel the difference you take on an attitude of I want that but I know that it makes me feel bad and therefore I will not eat it. Two years ago I ate something that I previously could eat and while I was eating my wife looked at the label and said "Do you know this has wheat in it?" Darn them for changing the ingredients. Well any way we were going to a friends daughters birthday party. I decided that since I was all ready going to be sick I would splurge. I had pizza and birthday cake. Um! Was it good. I had been missing it for so long. Well, that night I started bloating and the next morning it really hit me. I had to spend the next five days very close to a bath room. It was not worth it. Now when I am tempted it does not take a second thought to say no!

Well I thought I was doing well but then along with the hormone changes(TOM), came going back to the same-o same-o. Instead of taking the time to prepare, I ad-libbed and messed myself up. I didn't have any gf breads so I just grabbed a hamburger bun and other breads during the week. I think altogether I had maybe 4 slices of bread, and I did have raisin bran for breakfast on 2 days.

Anyway, I'm feeling run down again and I put on 3 more pounds. Today I'm getting it back together and making better choices. GF bread is going in the maker and my grocery shopping will be more selective.

A lot of Celiac Patients also have problems with dairy. But it is not really part of Celiac Disease. I was told to avoid it when I was first diagnosed then after a year I was told I could eat it in small quantities but to take lactaid before eating it. I now am able to eat dairy with out much problems all though Milk will make me really congested and cause some bloating.

But doesn't an inability to absorb dairy fall under celiac? Or is it a range of different symptoms?

The more info I get the more I'm beginning to convince myself to go back to my endo for more testing.

My blood test came back negative but when they did the biopsy they found I had no damaged villi but I had all ready put myself on the gluten free diet for about six months. My doctor was cool enough to say that since I reacted to it then she would say that I had it. An allergy can be treated with anti-histamines so if it is an allergy they will help. If it is an intolerance then the only thing you can do is avoid the foods. For some reason the medical field separates having an intolerance to having Celiac Disease even though it is really the same thing. So just stick with the diet and feel better.

I believe she does have gluten problems. She's had problems with her stomach for years and we've been through all the conventional testings. Everything comes back ok. So the only alternative I can think of is a food allergy. And after thinking that the endo wanted me tested for gluten intolerance, it kind of made some sense to me.

Our next step is to have her tested to make sure.

I make my cakes from scratch so I was thinking of using the Bob's Baking flour and add some Xanthan gum in place of all purpose flour. I haven't seen the Nameste brand but I haven't looked either. I'll keep an eye out for it.

It really is surprising what gluten is in. Is your daughter also having gluten related problems? Thanks for reminding me about Muddy Buddies. It has been so long since I was able to eat chex that I totally forgot about them. Just bought two boxes of rice Chex. Now I now what to do with the second box.

If you want to use a cake mix I strongly suggest the Nameste Brand. They are expensive but are the best cake I have made since going gluten free. We make brownies using the Bob's All Purpose GF Baking Mix and they are delicious. I have not tried to make a cake with it.

And I'm thinking too that as long as we get in our fruits and veges, we should be able to stay in range.

I'm not a big bread person to begin with but I never realized how many foods I ate that did contain gluten. ALL the prepackaged microwave dinners whether they have rice or not. WOW it is a big eye opener!

I'm trying to get my 14 y o daughter weaned off gluten too. I bought rice chex and she was happy to hear that I could still make "puppy chow" aka Muddy Buddys for a treat. I decorate cakes and next week will try a gf cake.

I'm new to gf foods but I have lost 2.5 pounds since last week. I'm not a big bread eater but after making my first batch I really had to control myself or the whole loaf would have been gone that afternoon! It was GOOD!!!

I'm not lactose intol so I can have yogurt. I try for one serving each day. I've found that the Stoneyfield Farms Organic yogurt is really good! I especially like the caramel and the chocolate underground on those days when I'm craving something really sweet or chocolaty. Plus it's gf.

I would say to track your calories and adjust where necessary to stay in range. See how that works after a week.

I lost a few pounds initially, but then I started baking and gained back everything and then some! I'm working on healtifying my recipes because I know I'm not going to cut them out of my diet, but its slow going. I suspect that the actual gluten or lack thereof doesn't play a huge part in my weight, for me its still a calorie thing- no big mal-absorbtion issues or such for me. I've noticed that the more cooking I do the less deprived I feel and the more able I am to make good food choices, but I don't always want to take the effort to make bread to get French Toast to go with scrambled eggs and I'll just have the eggs which are not as satisfying and so I eat ice cream later because I feel deprived from dinner and end up eating more than I need.
Its a mental problem with ties to gluten, but the actual gluten or lack thereof doesn't noticeably affect my weight.

When I went gluten free I actually gained weight. I was really skinny before because of the mal-absorption of nutrients. So it did not induce weight lose but weight gain. The standard gluten free breads made with rice/tapioca/potato is really high in carbs. I have since learned to modify recipes by using the bean, sorghum, buckwheat and flax meal which are a lot healthier and I have lost 35 pounds since doing this and getting active on the walking. The addition of the flax to any bread product is a good way to add fiber to your diet. even if it is just a tablespoon or so in a batch of dough. It is really hard to eat properly any way while traveling. And when you add food allergies into the scenario it really makes things hard. The low carb menus now offered at a lot of restaurants has been a blessing in making more gluten free dishes available.

I've gone from a 22/20 to a size 16W bottom and 18W top (bra size not changing). But I have only lost around 18pds since Feb.

My problem is that I am still figuring it all out. Eating gluten, soy, nut and seafood free has been very difficult. Especially because I have spent most of my summer traveling and eating out.

Getting a well balanced diet must be the key. I need to eat more fiber and veggies.

I've lost Size!! from a dress size 22/24 to 18/20. I look better for it, but still struggeling to loose some real weight. Within the first couple of months, i lost 10 kg's! Yes, wow!and i have not gained it back, and i'm not planning to either.
In my own experience, "the wheat blew me up", I was "Starving for nutrients". I'm definitely better off for not eating wheat, and the struggle to loose weight continues!
