I have tried to make lunches less boring by making a lettuce wrap (using a leaf of lettuce then placing lunch meat, cheese and mustard or something inside and roll). I like Dietz & Watson or Boar's Head deli meat as I have checked their websites and pick GF. Although I think all their meats are GF
If I could find a mayo I liked without soy, I would be tempted to make chicken salad with apples (I used to love that).
What about tacos? I love corn taco shells.
Whole Foods had gluten free mini corn dogs and chicken fingers for kids in their freezer section.
