Fruit, popsicles, and rice cakes. I realize popsicles arent the most nutritionally useful source of carbs, but they manage to fit 25 carbs into a 100 calorie popsicle so they are good on days when you either need a quick carb source and not many calories, or you want dessert and still have a little bit of room in your plan. Fruit and beans though are very good choices for a well-rounded balanced diet.
I upped my fruits and veggies. Love sweet potatoes put them in the toaster oven or the grill. They taste great when they come off the grill.

Other ideas: rice of course, and quinoa. I love rice tortillas. Wild rice, millet, etc.
Don't forget that beans are a high carb food, I use canned beans a lot, with salsa, or on a salad. They are high in vitamins and protein too, pretty much the perfect food. And high in fiber.
And there are always the starchy veggies. Sweet potatoes, winter squash, rutebegas. My grocery store sells bags of cut and pre-cooked winter squash that I just throw in the microwave. And I made some great roasted turnips the other day.
