I just made this awesome soup or stew (what ever you want to call it) Its only 253 cal.per cup.
2 lbs lean beef (eye of round) 1 table spoon olive oil 1 large onion chopped 1 clove garlic, finally chopped 1/4 tsp. salt 1/8 tsp. pepper 1/4 cup cilantro 1 can (15 0z) stewed tomatoes 1/3 can tomato paste 1 can (1lbs, 13 oz) hominy
1. In a large pot heat oil and sauté beef
2. Add onion, garlic, salt, pepper silantro, and enough water to cover meat. Cover pot and cook over low heat until meat is tender.
3. Add tomatoes and tomato and tomato paste. Continue cooking for about 20 min.
4. Add hominy and continue cooking another 15 min., stirring occasionally, over low heat. If to thick add water for desired consistency.
VARIATION: Skinless boneless chicken breast may be used to.
Now I played with this a bit. I did 1 can of rotel tomatoes mild and 1 small can of chopped green chiles. Also i used the whole can of paste. I used about 2tbl spoons of sugar to because of the acid in the tomato stuff.
