Hmmm, well I love almost all veggies so I'm not sure how much help I can be but have you tried marinating them and then grilling them. We do this with squash, eggplant and asparagus all the time in the summer. So yummy! I usually use fat free italian dressing for my marinade and/or balsamic vinegar. YUMM-O!

I love fruit but am a picky veggie eater too. I am trying to expand my selection though. I eat a lot of salad and try to incorporate things in there like carrots, celery and cucumbers. Other then that I like beans,and of course corn I love but isn't really good for you.
I'm picky too, always have been. I like the "bad" veggies like peas, corn, and sweet potatoes. I don't really like green beans, carrots, celery, or tomatoes. Yuck. Makes it hard for me. I like to drink V8 fusion though! And I like SOME fruits...so I figure that's ok.
I struggle to get in just 2 or 3 veggies a day. Fruits, no problem. But veggies, uck. A couple things I have tried is 1) switched to baby spinach instead of iceberg lettuce. More nutrients. 2) drink a V8 every day. Just a small can, but at least it counts as a veggie serving.
I also bought some of those Birdseye steamers. They have single servings of things like corn, green beans, peas, etc. I grab one of those and take to work and eat it with whatever I have for lunch. Some I have liked, some not. But I'm trying...
My goal is to just be consistent...

Jenn, definitely right there with you.. I grew up in the "back woods" with a garden so I like things raw, in general, but I'm still not good about trying new things. Spaghetti squash was something I wasn't sure about, but that turned out really well - my kids love to pull out the "spaghetti" and it gets them involved - but okra... okra didn't go well at all... nor did edamame....or eggplant...
OH my gosh! I thought I was the only one who has trouble with vegetables, but was afraid to say anything. I am also trying to expand and taste and hopefully learn to love new vegetables. Fruits the same way. I love most fruits, but the melon family ..not sure about. Good luck with finding the right vegetable for you.

Ok..so i know we need to eat lots of fruits and veggies...but what if we dont like lots of them???...see i like green bean,lettuce,spinach,squash,and tomatoes(occasionally)...but i have a hard time liking the others...i'm trying to broadin my horizons by grilling eggplant with a recipe i saw online and ..welll...not so good...i hate busy recipes that call for tons of ingriedents...i need simple and good...is there no one else like me??
