About the chicken cilantro soup, you don't have to sautee the veggies, if you want to cut out the butter, but it isn't a lot of butter, so you should be alright. I'm sure they'd cook fine without having to be sauteed first.

I mentioned a few days ago that I really do like to cook. I had been in a rut, and started once again turning to sparkpeople, and spark recipes for ideas, and lately-that's made me more creative without having to turn to recipes. I am posting links to most of the recipes that I have submitted at sparkrecipes.com, as I find it easier to track by posting a recipe rather than entering individual ingredients. I must be doing something right, because a couple years ago, two of my recipes received an editor's choice rating. :D A lot of these are soups and stews, because my family loves my soups and stews, so I am the designated soup and stew maker. (If you want non-healthy soups/recipes, I know how to make great New England style clam and oyster chowder, Wisconson style cheddar soup, cheddar broccoli soup with or without bacon, and my baked mac and cheese is always a hit, as are my deviled eggs. Good for family gatherings. You can bring it and you're not obligated to eat a lot of it. Just a little so they know you're not trying to poison them.)

I CAN'T BELIEVE IT'S NOT GUACAMOLE: (okay, about this one....I was making an enchiladasagna and I HAVE to sneak vegetables into stuff to get my kids to eat them. I did this to mix into the enchiladasagna, and it smelled...and then tasted...exactly like a good guacamole. I made it again just to have, and it was a huge hit. Avocado is GREAT for you, but if you really need to be careful of your fat intake, this is a good alternative.)
