I found this in the Cooking Light magazine. I just devoured 2 servings of it, yummy!
6 med tomatoes, chopped
1 small onion, chopped (I used frozen)
1/2 c. frozen green pepper, chopped (my addition)
2 tsp. sugar
1/4 tsp. salt
1/8 tstp. pepper
1/2 c. dry bread crumbs (I used Italian)
1/2 c. grated parmesan
1 T butter, melted
1. In large bowl combine first 6 ingredients. Transfer to a 2qt. baking dish that's coated w/nonstick spray.
2. Combine last 3 ingredients and sprinkle over tomato mixture.
3. Bake, uncovered, at 350 degrees for 25-30min. or until golden brown.
