This is a Rachael Ray recipe, very yummy! 1 burger has about 250 calories, 9 grams of fat (only 1 sat fat), and 10g carbs. Their also chock-full of vitamins! They're good if you serve them over a low-fat caesar salad. The recipe makes 4 servings.
1 14oz can Alaskan salmon, drained and flaked
2 egg whites, lightly beaten
1 handful of fresh parsley, finely chopped
1 zest of 1 lemon
2 cloves of garlic, finely chopped
3/4 cup Italian bread crumbs
black pepper and salt
2 tsp. extra-virgin olive oil
In a bowl, combine all ingredients. You'll want a lot of pepper and a little salt. Form into 4 patties.
Preheat the olive oil in a nonstick pan. Cook the salmon patties over medium heat (watch for over-browning). They'll need to cook about 4 minutes on each side.
