You can always try grilled chicken roll ups. Grill the chicken the night b4 then just assemble with shredded lettuce, tomatoes, ranch dressing in a wheat wrappers. Serve with a 8 oz fruit smoothie. You can branch out and get the roasted red tomatoes wrappers or the green spinach wrappers. The color might intrigue the kids.
Don't forget leftovers. Fix a big meal on Sunday then serve leftovers Monday.
Pizzas Don't have to be unhealthy. limit the cheese & greasy meats, pile on the veggies. use precooked crusts to shorten cook time. Look for whole grain alternatives.
Create Jell-O deserts with fruit mixed in. Top with a bit of whipped cream out of a can to make it special and real whipped cream is much better than cool whip.
You can prepare Chicken and Dumplings up to the point of putting in the dumpling part. I always put onion, celery, carrots, bell peppers, and tiny green peas in mine. I don't add the peas till the dumplings are done. The peas just need to heat through. I use the long strip dumplings from the freezer section. This way you get everything in a one pot dish. Meat, veggies, bread.
You could also do this to chix soup. Reheat add noodles, cook and serve.
Chicken Salad Sandwiches. You can pep the chicken salad the night b-4. Depending on what you put in your chicken salad you can sneak in fruits (apple or red grapes) and veggies (celery, green onion) use light mayo and go easy on it. Whole Grain breads. Serve with apple slices or veggies with ranch dressing dip.
Cook the meat the night before ( turkey meat?) . Prep the veggies the night b-4. then all you will need to do is nuke the meat and beans in the microwave. Serve in soft taco shells or serve as a salad over tortilla chips.

I just signed my kids up for Tae Kwan Do on Mondays and Wednesdays. They leave at 4:30, and don`t get back until 7pm. I need some good easy, fast, kid pleasing ( I know this is asking a lot lol) recipes, that I can make ahead, and just cook when I get home. As it is, they are eating before they go, but its stuff like Kraft Dinner, or hot dogs.
