I understand, and I'm looking forward to seeing and hearing how it works. If I make it, I can always add the jalapeno for us, and see what I think. I'm not into really hot like habaneros, but I like a bite, and I like the crunch. So different tastes are what make life interesting.

I'll be trying it this weekend. Afraid I have to skip the jalapenos, but I'll post another photo blog when I make them.

Sounds great. I might add a little finely chopped jalepeno to the stuffing for a bit of a bite and crunch and then top with salsa and a dollop of sour cream or guacamole.

I知 working out a new recipe, somewhere between a stuffed pepper and a chili relleno. I知 going to roast, peel and seed poblano peppers and split them not quite all the way down one side, to make an open cone. The filling is going to be corn, black beans, onion and tomato, spiced with cumin and smoked paprika. Each stuffed pepper will be topped with about two tablespoons of jack cheese, then bake for about 20 minutes until the cheese melts and browns a little.
