I didn't measure the water, but I put in enough to cover about a half inch of the squash.

I scooped the insides out really well, then plopped them face down in the water (so they laid flat, fleshy part was in the water). I did salt the water a little for flavor. I think putting some fresh rosemary or thyme sprigs in with it would work well, too.

I had it on low for about 6 hours. I had a small acorn squash; it probably would have been done in less time, but, I was at work and couldn't check. The halves got really soft by the time they were out of the oven, but, deliciously so. I have heard that people eat the skin, but I didn't.

I have never thought to microwave the squash. I am pretty happy with the way the crock pot worked, though.

wow, great idea!

how much water did you use and how long did you put the squash in for?

That sounds great. I never thought about doing that. I usually do mine in the microwave if I'm in a hurry. I'll have to try this.

This may not be news to many of you, but on a whim last week I decided to throw caution to the wind and see what would happen if I left my squash face down in some water in the crock pot on low. I LOVE squash but don't usually have the time to cook it in the oven.

Well, it worked and it ROCKED!!!

When I got home I whipped up some israeli couscous. When I threw the couscous in the boiling water I also added some golden raisins. After it all sat together for 5 minutes I added some mushrooms and Great Northern beans and lots of fresh parsley. A sprinkle of feta for a bit of cheese.

I filed up the squash halves and popped it all in the oven where I had already thrown in some asparagus to roast.

Dinner took less than 30 minutes, and was really cheap. This is totally a new go-to this fall and winter. I can't wait to experiment with some other flavor combos.

My husband loved it, too, might I add. He isn't a huge fan of squash - he calls it 'baby food'. He really liked this, though. Per his request, we are going to try a curry-ish profile next.

Just had to share. I can't believe I never thought to try this before!!!!
