I love spicy foods and because there is so much flavor, I find them very filling and satisfying. Today I made these stuffed jalepeno peppers and they turned out wonderful! They sell these in the grocery store, swimming in olive oil, so I came up with a lighter version.
2 jalepeno pepper - cut in half, seeds removed
60 grams of feta cheese
Put peppers, covered, in the microwave for 4 minutes on high. Let sit for 2 minutes to steam
Stuff 30 grams of feta cheese into each pepper.
Microwave on high for 1 minute, just to warm the cheese.

The nice thing about this recipe is that you could use a lighter calorie cheese to stuff the peppers with, or experiment with other fillings.
