Have you posted this on Sparkrecipes.com.? I'm using it all the time, mostly to calculate my own recipes, but also to share and try other people's submissions. It's one of my favorite features here at Sparkpeople. Your recipe sounds wonderfully simple and I intend to try it. I'm going to use ricotta cheese, since that is what I have on hand.
I love spicy foods and because there is so much flavor, I find them very filling and satisfying. Today I made these stuffed jalepeno peppers and they turned out wonderful! They sell these in the grocery store, swimming in olive oil, so I came up with a lighter version.
2 jalepeno pepper - cut in half, seeds removed 60 grams of feta cheese
Put peppers, covered, in the microwave for 4 minutes on high. Let sit for 2 minutes to steam Stuff 30 grams of feta cheese into each pepper. Microwave on high for 1 minute, just to warm the cheese. 166 calories, 4 carb, 13 fat, 9 protien
The nice thing about this recipe is that you could use a lighter calorie cheese to stuff the peppers with, or experiment with other fillings.
