Now that's a recipe for ME!

Anytime that I can have 12 eggs is a good day! LOL

It sounds delicious and the grandkids are to come this weekend to visit, kind of a post grandparents day visit, and it would be an awesome time to try out this wonderful recipe.

Bottoms up! I might even try it with egg whites, since I don't eat too many yolks and like the whites just as much if not better!

Thanks for sharing and forgive my silliness about eating 12 eggs!

I found this recipe at Allrecipes.com. The nutritional information is good, without any changes to the recipe but I used turkey sausage instead of regular sausage. Also if you check out the web-site, others offer variations they've made.

Nutritional information: 1 muffin: Calories are 49.9, Fat is 2.49g, sat fat is 1.4g, poly fat .1g, mono fat, .5g, cholestrol 6.8, sodium 154.4mg,potasium 23.2mg, carbs1.5mg, and protein 4.9g.

1/2 pound bulk pork sausage
12 eggs
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup shredded Cheddar cheese

Directions

In a skillet, cook the sausage over medium heat until no longer pink; drain. In a bowl, beat the eggs. Add onion, green pepper, salt, pepper and garlic powder. Stir in sausage and cheese.
Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees F for 20-25 minutes or until a knife inserted near the center comes out clean.
