This sounds yummy! I love chicken salad, but it's so hard to come by a low-fat version. Another variation that could give the chicken some moisture would be to add a fat-free creamy salad dressing, then add the veggies, fruit, and nuts. I'll have to try your recipe sometime soon! Sounds really, really good. I love chicken salad like this. I ususally plop some over salad greens or borccoli slaw or something like that. The fruit and nuts in here sound sweet and tasty - I usually make mine savory or even add Frank's hot sauce.
Actually, what I love: Make a basic 'chicken salad' of chicken, celery, onions, blue cheese crumbles, Frank's, and lite mayo/olive oil Kraft mayo (I hardly use any). I serve it over greens or with carrot sticks, or both.
Yum. Like Buffalo chicken wings. You can sub blue cheese dressing for the mayo & crumbles, if you want. Leff work. It may sound fattening, but a little goes a very long way. You can play around with adding the crumbles to the mayo or yogurt or sour cream - it makes a dressing. Just mix it all up really well. Yum-yum-yum.
I haven't made it in a while, I am so craving it now, ha ha ha! I have a major weakness for Buffalo wings (I'm from Buffalo, so I come by it honest!).

Hello there! I recently made a very low calorie chicken salad that is to die for! And it's really easy to make.
You boil about 3 chicken breasts and chop 'em up. Then you add about 2 tbs of regular mayo, 2 or 3 tbs of Fat Free sour cream, and you add almond slivers, 1/4 c chopped celery, chopped up green apple, and dried cranberries to taste. Add salt and pepper to taste, too. And really, you can add anything you want. You can add freshly halved grapes or golden raisins or whatever you like and this salad is delicious!
Eat it with Wasa crackers, on toast on cucumber slices or wrapped in lettuce leaves. This is really quick and yummy!
