I just thought of another favorite, and my boyfriend will eat it too!

Chopped salad: (i don't use any actual lettuce)
Chopped fresh beets
Chopped Cucumber
Grape tomatoes cut in half
chickpeas
Avocado (if there are any ripe ones
Toss with Newman's Own Lighten Up! Italian dressing

We often eat it as a meal.

I know I did reply before but I will say the healthy meal that I do like are the different salads out there. With a base of lettuce there are so many thing you can add to make it good and healthy.

Hi ShakenBake,

I don't have the cookbook in front of me, but it had feta, breadcrumbs, and a ton of fresh seasonings. When I get home I will check the cookbook.

My favorite healthy meal would have to be Hamburger stroganoff. So simple to fix and not many calories at all!

Makes: 6 servings

4 cups uncooked yolk-free wide egg noodles (8 oz)
1/2 lb extra-lean (at least 90%) ground beef / Turkey Burger
1/2 cup chopped onion
12 oz fresh mushrooms, halved
1 clove garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup
1 container (8 oz) reduced-fat sour cream
2 tablespoons chopped fresh parsley


DIRECTIONS
1. Cook noodles as directed on package. Drain; cover to keep warm.
2. Meanwhile, in 12-inch nonstick skillet, cook beef over medium-high heat, stirring frequently, until thoroughly cooked; drain.
3. Stir in onion, mushrooms, garlic, salt and pepper. Reduce heat to medium. Cover; cook 5 to 8 minutes, stirring occasionally, until vegetables are tender.
4. Stir in soup and sour cream. Cook, stirring occasionally, until hot. Serve over cooked noodles. Sprinkle with parsley.

My favorite meal would have to be a huge salad with 3-4 fresh greens, roasted beets, walnuts, goat cheese, mushrooms with lemon olive oil, seared salmon and steamed asparagus. I love salads more than the main course.

My sister-in-law taught me a yummy and healthy pasta dish that she makes for my niece and nephew.

It's egg noodles
Tons of broccoli floretts, steamed
Toasted pine nuts
sprinkle with olive oil and parmesan
Sometimes I put halved grape tomatoes in it as well

My all time meal would have to be Christmas dinner with all the trimming's and family.
Next would be Italian or sea food.
Sorry not so healthy but can be made healthy.
