Once you cut into a avocado, it needs to be stored in the refrigerator. Also, make sure that you take the pitt out, as it will not rot as fast.

The key to me eating healthfully is eating mindfully. This means reading labels, making balanced choices, and most importantly, listening to my body's hunger cues.

thanks!!! all of these sound great. I think I will try the soup first and work my way through the remaining recipes!!!! My usual favorite is a fresh tuna and avocado salad with cilantro, a little soy over sushi rice but I didn't have tuna handy.

Here is a recipe I use as a dip and a sandwich spread. I love it. Not the most healthy, but in small quantities it sure is great.

Grilled Avacado Rockamole

Recipe Summary
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 5 minutes
Yield: 10 servings

8 ripe avocados, peeled, pitted, and halved
1/4 cup extra-virgin olive oil, plus more for grilling
2 lemons, juiced
Gray salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
3 tablespoons finely minced garlic
3/4 cup julienned basil leaves
1/2 cup sour cream or creme fraiche
1/2 cup freshly grated Parmesan
Preheat a grill or grill pan.
Place peeled and pitted avocado halves in a bowl. Drizzle with olive oil and lemon juice (to prevent oxidation), and sprinkle with a good amount of kosher salt and black pepper. To grill indoors, preheat a grill pan over medium heat. Douse a paper towel with olive oil, then swipe it across the grill pan so you have just enough olive oil so the avocados won't stick (they will supply their own fat). Place avocados on the grill, cut side down. Grill for 1 full minute.
Meanwhile, preheat a 10-inch saute pan. Add 1/2 cup of olive oil to the pan, add minced garlic and saute until it gets light brown. Add julienned basil and saute until wilted and transfer to a large glass or ceramic bowl. Take the avocados off the grill and add to the bowl. With a fork, mash the avocado/basil mixture well. Add sour cream and stir. Add Parmesan and stir. Serve immediately.

as a starter to a dinner party,half an advacardo filled with shrimps.

as a snack,make in a dip with creamed cheese and cayenne pepper to ring the change from grogomola.

sliced with low fat camebert and some chicken or ham on a toasted sandwhich or bagel,put in oven till advacardo is warm and camebert starts to smelt.

advacardo and shrimp salad

in a vegtable terrine.puree differant vegetables seprately,mix with a bit of geletine and season to taste with herbs etc..layer the differant caloured vegtables in a porciline bread form.ie.spinach or peas.then carrot,then potatoe or swede,then advacardo etc.put the bread form in a deep baking tray and fill the baking tray with water.bake in the oven for about 30-40 minutes or until firm.slice and serve either warm or cold,with salad and bagette.

Did you know that Tupperware has containers in which you can store Avocados? They are on special right now.

I use it alot a sandwich spead...

put it in a soft roll, spread the avocado, add some lean meat, lettuce, tomatoes, and a little cheese and you have a mexican sub (a torta).

I had a delicious tex mex soup at a restaurant recently. It had chicken, rice, some vegetables and on top was sliced avocados. The hot soup with the cold avocado on top was delicious. I thought I would try something like that at home.

I have some avocados at home right now that are ripe but I looking for a new recipe involving them. I usually have a vision but tonight I am at a loss. Ideas please!!!!
