Get a good oven thermometer and see if your oven is actually reading right. You may need to have it professionally calibrated to the right temp.
Lower your baking time to 7 min and remove immediately from the baking pan to a cooling rack or you will get what is called residual cooking and they will be hard. See if that works if not then lower your oven temp by 25*.

I need a tip on baking. Though I have never been a sweets person, I have started baking for others and enjoy it. I have many problems though.
1. How do I keep my cookie dough not becoming bread dough and vice versa.
2. My cookies, nine times out of ten, become hard. Someone suggested banana or applesauce. What is the ratio? Does it work for all cookies?
3. I added banana to a chocolate chip cookie recipe that also had self rising flour and baking powder. My cookies were flat. Was it because of the banana.
4. Lastly, does anyone have a basic cookie dough recipe that they have tried and like that includes vanilla? I am looking for something I can modify (add banana etc...) but basic enough but still has a good flavor.
