Made this recipe for the first time this morning. Super fast and very good. From the DTOUR diet from Prevention. My new fav! *Enjoy* emoticon

MORNING FRIED RICE

2 tsp canola oil (I use olive)
1/2 cup Chinese pea pods, cut into thirds
1/4 cup shredded carrot
1/4 thinly sliced red bell peppers from jar (fresh is good too)
1/4 cup thinly sliced onion
2 omega-3-enriched eggs
1 tbs reduced-sodium soy sauce
1 tsp grated fresh ginger (I'm lazy, I used ginger from spice rack!)
1-1/2 cups cold cooked brown rice
*Add salt substitute such as Mrs. Dash to taste. Recipe does not call for, but definitely kicks it up a notch!

1)Heat a large nonstick skillet over medium-high heat for 1 minute. Add the oil and swirl to coat. Add the pea pods, carrot, peppers, and onion. Stir then cover and cook for 5 minutes or until onion is wilted.
2)While above is cooking, beat the eggs, soy sauce, and ginger in a bowel.
3)Uncover the veg and add rice. Toss for 1-2 minutes or until rice is hot. Reduce heat to medium. Scrape rice mixture to side of pan. Add egg mixture in the center, stir to scramble light. Then toss with the rice for 1-2 minutes, or until eggs are cooked.

4 servings

PER SERVING: 154 calories, 6 g protein, 21 g carbs, 5 g fat (1 g saturated fat), 90 mg cholesterol, 203 mg sodium.
