I found this Shepherd's Pie recipe submitted by user Buffalojoy. I will have some of it for lumch at work tomorrow I used 1 can of peas and carrots and 1 can of corn but I drained them first. It was very tasty.
Cooking Light's Portobello Cheeseburgers!! I will modify a little to use what I have (feta instead of gorgonzola and spinach instead of arugula).
I can't wait to try these out - they look so yummy!! One of my FAVORITE things in the whole world is the Portobello sandwich at Cafe Sunflower here in Atlanta, it's served on a rosemary focaccia bread and has goat cheese and is divine. I'm hoping I will discover I can make something similar on my own at home! :)

Enchiladas at our house - the boys will have chicken enchiladas and I'll have pepper/onion/boca crumbles in mine! Lettuce/tomato/all natural sour cream on top and some corn.

I'm making taco salad tonight. Black beans, romaine lettuce, extra lean beef with low-sodium seasoning, a bit of cheese, jalapenos, salsa, and fat free sour cream. It works out to 300-400 calories depending on my portions and proportions and fills us up. Taco salad night is my husband's favorite.

Went out and had a bento box. It had a small serving of pork cutlet, two scallops, grilled zucchini, and pickled cucumbers. It was all great and the variety of flavors were perfect.

Tonight is boneless/skinless chicken breast that have been marinating in a mojo creole marinade for two days. Also cream spinach for my FI and Brussle Sprouts for me and leftover roasted garlic potatoes.

I found these tiny little taco shells (La Tiara brand) that I like to stuff with taco flavored shredded chicken and pico de gallo. I love them because I can eat a plate full of tacos and not feel guilty! Yum!

Here's a recipe I invented -- cut-up leftover chicken, a can or two of beans, a 14oz can of corn, a 14oz can of diced tomatoes (don't rinse or drain any of these, you want the juices), a chopped onion and an envelope of taco or fajita seasoning mix. Combine it all and simmer for thirty minutes to an hour. I usually serve it over brown rice, but you can skip the rice if you like. I call it Southwestern Stew.
Tonight I'm having meatloaf -- hamburger, Italian bread crumbs, eggs, ketchup and an envelope of onion soup mix. YUM!

We are going to a potluck tonight and I'm bringing an easy appetizer. Cut 3" squares from rolled out puff pastry, and push into mini muffin tins sprayed with pam. Put a small piece of brie cheese in the bottom of the cup. Then top with a small amount of cranberry sauce. Bake in a 375 oven for 15 to 20 minutes and serve.

I'm making barbecue beef and beans. I'm browning about a pound and a half of lean ground beef. It goes in the crock pot with three cans of whatever beans I have on hand (I always like at least two different kinds in any bean dish), a finely chopped onion, and a half of a small jar of barbecue sauce (I bought some imported barbecue sauce that's as thick as molasses). It's going to simmer all day.
