Go to www.allrecipes.com and select INGREDIENTS. Type ricotta (and whatever else you want in the dish) into the ingredients I want to use section. A list of recipes using those ingredients will pop up.

You could make a dessert out of it by adding your favorite fruit and some honey.

Or add it to some pancake batter with some ripe banana or even canned pumpkin in it and make really yummy pancakes.

Also lasagna with no cook lasagna noodles, then bottled marinara sauce, then spoon on some ricotta mixed with an egg and basil then top with shredded mozzarella cheese and do as many layers as there are ingredients for. The last layer would be noodles topped with marinara and sprinkled with mozzarella cheese. Bake at 350 for 30 to 40 minutes. You could also throw in some vegetables on top the sauce.

as i was going to suggest to make an omlette or to mix it with some young fresh spinach leaves to make a salad with a bit of lemon juice and ginger what you suggest have similar ingrediants i donīt see why it wont work.or for a simple snack have on some thin crackers.if you make the casserole let me know what it taste like as i love anything with spinach in it.

I have 1 cup of ricotta leftover from a recipe. Any ideas on a simple, low-cal recipe?

I was thinking I could just mix in an egg, some chopped spinach and onion, some whole wheat noodles--and bake it as a casserole? But I am not sure it will turn out well...
