Bingo! I made a healthy fish recipe that even my picky (and often fish-disliking) husband devoured.

So I feel compelled to share:
1. Pre-heat oven to 370.
2. In a small non-stick pan, with a splash of olive oil, sauté some onion and garlic. Cook about 5 minutes, then add 3/4 cup of white wine. Reduce for about 5 more minutes.
3. In a large glass baking dish:
Fill bottom with cleaned, raw spinach. Lots! It cooks down as you know. Then sprinkle the onion mixture on top. Add a few lemon slices.
4. Top with thin fish fillets (I used trout--it had been on sale and looked very fresh at the store). Sprinkle a little salt and pepper on top. Cover with tin foil.
5. Bake til done (mine took about 18 minutes)
The fish was moist and tasty. The veggies made a lovely broth. I served with a side of quinoa. A very light, tasty meal!
