Yum, you can also do apples in the microwave - they mush up nicely.

Came across this in Everyday Food and it sounds fantastic. I'm making tonight to add to my oatmeal in the morning.

Stewed Apples

1 Tbsp. unsalted butter
2 Fuji or Gala apples, peeled, cored and thinly sliced
pinch course salt
3/4 cup unsweetened apple juice
1 tsp. fresh lemon juice
1/2 tsp. ground cinnamon
pinch nutmeg

In a large skillet, melt butter over med. Add apples and pinch salt. Cook, stirring occasionally, until apples are light gold, 4-5 mins. Add apple juice, lemon juice, cinnamon & pinch nutmeg. Cook until liquid is reduced by half and apples are just tender, 3-5 mins.

Makes 1 1/2 Cups
