I've tried to down play the role of meat in the diet. So that the whole meal is no longer planned around a hunk of meat. Somenights we don't even have any.

Recently I've found turkey burger at a good price at my supermarket and use that for tacos and hamburgers.

If I'm using regular beef for tacos I brown the beef, drain it, rinse it under water to wash off as much fat as I can, and then go back and add the seasonings. I read somewhere once that by doing that you can get ground chuck almost as low fat as the supper lean ground beef that way.

I do a mix so the family doesn't get bored and mostly focus on portion control. Tonight we are having hamburgers on the grill - I use half regular ground beef and half super lean ground beef - for 3 of us I usually make 4 hamburgers I have 1 and the guys split the extra. They can have more calories.

I also eat a lot of chicken breast. But I'm not willing to give up a nice big t-bone steak now and then. So I plan those days out. Eat very low calorie and low fat until my supper. Then I have my steak with a lettuce salad and lite ranch dressing.

We eat a lot of fish and shellfish. We have that at least twice a week if not more. We like vegetarian pastas and we have found some good low fat duck recipes of late. Pork is also a good alternative. I try to have two fish/shellfish dishes and one vegetarian each week and then fill in with a variety of poultry, pork, beef and buffalo.
