JEANINE100, that sounds great! what do you usually serve it with? i love gravy with my turkey but gravy is pretty high in fat & cals.

I have a natural hourglass shape and I really want to keep that but I don't want it to jiggle -stacey, thintervention

I just took a turkey tenderloin out and put the turkey on top of a bay leaf, sprinkled some olive oil on it and put on some poultry seasoning and a bit of grill seasoning. Tomorrow I will bake it for my dinner with fresh carrots. I try to do things the night before.

Cooking a bunch of chicken in advance is a great idea, thank you! This will be prefect for lunches. The big pots of freezable meals sound really yummy too.

We have a couple farmers markets around here and I just never seem to get to them. After what you said it has really inspired me to go. Great idea, thank you!

Last night I ended up making a chicken and veggie stir fry. Iíd forgotten that I had a bag of trader joeís stir fry veggies. I cooked up some chicken in Annie Chuns Kung Pao sauce, mixed with a little tempura dipping sauce and water then added my veggies and ginger. It turned out great and was super filling!

If there is a farmer's market or farm stand anywhere in your vicinity, make a visit and see what's there. I love to see fresh vegetables nicely displayed. Check out the greens because depending where you live there might be some really interesting greens that you can lightly steam for with that chicken breast or fish. or maybe some fresh herbs to chop and add to the meal. Seeing can sometimes help with inspiration if there is a place that you can see to get inspired:)

I batch cook and freeze my meals in meal size packages. Big soups and pastas. Chicken breast that you can then use to top salads, in wraps, for tacos or any other thing I can think of. I make big pots of rice with mushrooms, black beans, corn, peas, onions and spices and freeze that.

One thing that has helped me is planning my meals a week in advance and try different new recipes that look interesting. Then I make the list, buy the food and I'm committed. So far it has worked more often than not.

Here is a very simple one that makes a meal for me if I am in a hurry. It uses all of the ingredients you like.

box frozen spinach thawed
1/2 cup of drained small white beans or cannelloni
beans
4 cloves of minced garlic ( I like garlic - adjust)
1 Tbsp olive oil

In a sautť pan sautť the minced garlic in olive oil. When the garlic becomes translucent ( do not brown it) throw in the thawed spinach and cook. Add a little water to the pan or if you want a little more olive oil ( I am watching my fat intake). When spinach is almost done throw the 1/2 cup of beans to warm them thru.

You have a nice healthy one pan meal. Enjoy! Could not be simpler.

Ok Now I know what I am having for dinner.

i need to get excited about making my own meals again. i havenít been shopping in a couple weeks so iím pretty much down to frozen meals and canned soup. the problem is that i canít even get inspired to hit the grocery store and buy stuff to create new meals!

anyone have any ideas? i love fresh veggies, my protein is generally chicken, beans, eggs or canned tuna and i use a lot of salsa as well as frozen spinach. i rarely eat pasta unless itís whole wheat and i usually eat brown rice if i eat rice at all. i LOVE cheese but usually stick to a half serving on 2% milk fat cheese.

oh and i like things to be as easy to make as possible with very few steps. i know, i knowÖiím asking a lot for someone whoís looking for ideas, arenít i? emoticon
