Sounds like the link worked; your right you can substitute whatever greens you want; I've subscribed to a CSA (community sustained agriculture) and it's greens season - i've been really enjoying beet greens, swiss chard, spinach and lettucy stuff till it's coming out my ears (snicker). Last night I roasted some beets (the bottoms of those greens) and used a sparkpeople recipe (a curry sauce) which my husband raved about. The curry sauce is quite tart but put it over the sweet beets and it really is an awesome combination.

MMMMMMMMMMMMM sounds good. I added it to my cookbook. It is a simple basic recipe that you can switch out with any type of greens you like.
I think I am going to try it with dandelion greens. Dandelion greens are excellent for detoxing your liver and they are in season now so they are not as bitter.

not only do i like lentils but i also like bulgar - sounds like a hit for the menu this week; i've been trying to get a little yummy variety into the side dishes - have been stuck on brown rice for awhile which is good but variety is good too.

Here is a really simple lentil salad recipe I made up with no really precise measurements of ingredients, do it to your tastes.
1/2 bag lentils 1 cup bulgar wheat extra virgin olive oil lemon juice bunch of scallions sliced thin crushed garlic dijon mustard fresh tomatoes chopped
Cook the lentils as usual. Reconstitute the bulgar as usual. Mix both together in a bowl after all of the liquids are out.
Mix in the rest of the ingredients to taste.
I plated a scoop of this and topped with fresh chopped tomatoes before I ate it.
I love lentils as a side dish and in soup. They are great!

I would love to know which recipe you tried, there are several. :) I made a huge salad for dinner and had some lentils and cooked them and put them on our salad. They were good. I just cooked them in a little chicken broth and simmered with onion and garlic. Looking forward to trying to make a lentil salad.

Made a really good lentil and green combination the other night and it reminded me how much I enjoy lentils. mostly I tend to do lentil soup variants but the other night was lentils as a side dish and I really enjoyed it. it's on spark recipes because I wanted to know the calorie count.
