This is pretty much the same recipe I make for meatloaf, too. To cut down on fat I use two egg whites instead of a whole egg. I like to chop up onion and peppers in mine. If you don't like ground turkey flavor, use half turkey and half beef. I make mine with venison and that cuts down on the fat also. If you want to change things up, use salsa in place of the ketchup, or bbq sauce.

Thanks I will try this. I sometimes do the same, but I know it needs more. This sounds good. I guess I just want a good tasting meatloaf. Nothing special.

Be sure to compare the nutritional values on your turkey and beef. When I started buying the 96% lean beef it had the same values as turkey. I like turkey but if the values are the same I will go with the beef.

The meatloaf I make is a lot like this. I usually add some chopped up onion and green pepper - I like that flavor. I have always felt like it is pretty healthy and fairly low-cal if you stick to a reasonable size portion. If you want to cut down on the fat you could use extra lean turkey instead, though I tried that once and found it to be pretty tasteless and dry. Personally, I would rather have food with more flavor, even if it means my portions must be smaller.

I guess I should have said you can shape it like any other meatloaf. I just prefer the muffin cups because it's like individual servings and you don't have to cut anything.

Jeanine, here is the one I use. I follow Weight Watchers and when I entered my recipe into their recipe builder it only came out to 2 points per serving. That is pretty good.

Kim’s Meatloaf

1 1/2 pounds 96% lean ground beef
1/2 cup dry Italian bread crumbs (points figured with Great Value brand – Wal-Mart)
1 egg
1 small onion, chopped (about 1/4 cup)
1 Tbsp. Worcestershire
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. dry mustard
1/8 tsp. garlic powder
Ketchup (optional, I use 1 tablespoon per muffin cup for 0 points)

Heat oven to 350 degrees. Mix all ingredients except ketchup. Divide mixture evenly into 12 muffin cups. Bake uncovered for 45 minutes. Remove from muffin pan to paper towel covered plate to absorb some of the extra fat.

Serves 12
Weight Watcher Points – 2 per muffin cup
