14 baby carrots
1/2 cup frozen peas
1/2 cup frozen corn
2/3 cup rice
1 tbsp chopped onions
4 sprigs parsley
1/2 cube chicken bouillon
I cook the veggies, on separate pot do the rice (instant) and add bouillon. I spray the chopped onions with 1serving of Pam and throw them in the microwave for 1min. then I spray a skillet with more Pam and throw everything in a sautee it, adding the chopped parsley in at the last minute! This actually makes two servings for me because it is so filling, it's really easy to do, and I can always change it around while keeping the same kind of structure! For the whole thing (not splitting it into 2servings)it comes to 328cals, 2grams of fat, and 14g of protein! The carbs are high (94g) but are mostly fiber, not sugar, and the white rice can be replaced with whole wheat rice or maybe beans! Another idea is to skip the bouillon and parsley, replace the corn with brocolli and stirfry the rice and veggies with 3tbsp of kikkoman teriyaki sauce mixed with 1tbsp of honey and mixed with equal parts of water! You can add and substitute all kinds of veggies and sautee with all kinds of sauces! I know it's not a gourmet meal, but I love how it tastes and how it fills me up.
