I made this last night for supper, and it is very good

Minestrone Rustica Soup

1 cup onion, finely chopped
1 cup celery finely chopped
1 cup carrot finely chopped
2 cloves garlic, minced

1 potato finely diced
1 15 oz can diced or crushed tomato
1 15 oz can kidney or cannellini beans
4 cups water( I used chicken stock for extra flavor)
1 sprig fresh rosemary
1/2 cup fresh parsley chopped
salt and pepper

3 cups baby spinach
2 teaspoons grated parmesan cheese or other Italian cheese for garnish

heat a large pot and coat with olive oil add onion, carrot, celery and garlic..cook for 10 mins
put tomato, beans, potato, water, rosemary and parsley and salt and pepper in pot and simmer another 15 mins
add spinach stir well and simmer for 10 mins
when done, remove the rosemary stems, the leaves will have fallen off and flavored the soup
serve in bowls with a sprinkle of parmesan
serves 3
