This soup is very satisfying and keeps well. Cooking it for a long time ensures that the barley gets creamy and thickens the soup. I have not tried this in a crock pot but it should work.
* Lentils, 1 cup * Spinach, frozen, 16 oz package * Onions, raw, 1 cup, chopped * Olive Oil, 1 tbsp * Barley, pearled, raw, 0.5 cup * Chickpeas, 10.5 z can * Chicken Broth, 4 cups Additional sauteed onions and garlic Juice of one lime
Saute onions in oil until caramelized. Add all other ingredients and bring to a boil. Reduce to a simmer and cook for 2-3 hours. Add water as needed. When done add lime juice. Serve with additional caramelized onions and garlic.
