My family loves this dish. It has an exotic tart taste and only 136 cal per serving! 30 Minutes to Prepare and Cook
1 lb boneless, skinless chicken breast strips 1 peeled diced mango 1 tbsp curry powder 1 tsp saffron 1 tsp salt 1/4 cup lime juice
Place 1 tsp salt in the bottom of a hot skillet. Then place diced mango and lime juice in the skillet and stir together. Place chicken breast pieces on top of mango, and cook on high heat for about 10 minutes. Add remaining ingredients and cook on medium heat another 10 minutes stirring frequently until chicken is cooked through. Serve with stir fry vegetables and wild rice. Makes Four 4 oz servings
