I like this and it's pretty easy to make.

Bruschetta Pomodoro

2 cups minced plum tomato (about 3/4 pound)
1 1/2 teaspoons capers
2 tablespoons chopped kalamata olives
1 tablespoon chopped red onion
1 tablespoon chopped fresh basil
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon balsamic vinegar
1/8 teaspoon pepper
10 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted

Combine all the ingredients except French bread; cover and let stand 30 minutes. Drain the tomato mixture. Top each bread slice with 1 tablespoon of tomato mixture.

Yield: 10 servings

You can't go wrong with seafood,( such as shrimp cocktail or smoked salmon) or a veggie based appetizer( stuffed mushrooms, marinated olives, mini kebobs with marinated veggies or tortellini, basil and low fat cheese cubes. I like to stuff cherry tomatoes ( cut tops and drain juice and seeds first) with a low fat cream cheese mixture ( 8 oz. low fat cream cheese, 1 pkg, Hidden Valley Ranch dressing mix, 2 Tb. milk, thins strips of fresh basil, crispy lean bacon bits and basil strips as a garnish. Fresh fruit kebobs are good too. had a few appetizer recipes posted today that sound good, such as asparagus frittata and cheese puffs. You might want to check them out.

I like to make deviled eggs, but instead of filling them with the yolks and mayo, I make a salmon pate with fat free cream cheese and stuff the eggs with that. Another favorite is tortilla pinwheels. Use whole wheat tortillas spread with thin layers of refried beans, fat free shredded cheese, and salsa. Roll them up and slice them into pinwheels. Can be served warm or cold.

Motivation without information is useless.

Anyone have any interesting recipes for healthy appetizers. I am going to a family get together on Christmas and we are just doing appetizers and such. I want to bring at least one thing I would know is healthy. Any ideas??
