LIRPAC - I have a "Banana Nut Cream of Wheat" recipe I posted on SP. It's got mashed banana, flax seed, honey, cinnamon,(walnuts/pecans optional).. I'm a huge fan of cream of wheat myself!

I LOVE this breakfast: Cinnamon raisin english muffin, Egg Beaters egg whites scrambled with FF cheddar cheese on top, and 2 pieces Oscar Mayer turkey bacon. Stack it into a breakfast sandwich and VOILA!! It's my favorite emoticon

It looks like this topic hasn't been touched in a while, but I am always looking for quick breakfast tips. I love the mini-quiches in The South Beach Diet cookbook. Chop some veggies of your choice, sautee lightly, add EggBeaters, put in a muffin tin sprayed with Pam or use tin foil liners (my preference), bake at 350. When I'm rushing out the door in the mornings, one of my favorite breakfasts is a "morning monte cristo" sandwich.

Here's what you need:
2 low fat whole grain frozen waffles
3 thin slices of ham (I like brown sugar ham with
this)
1 slice Kraft Singles (2% milk)
1 tablespoon raspberry jam

Toast your waffles until they are REALLY cripy. On one toasted waffle, stack your ham slices, then the slice of cheese on top of the ham. Microwave that half for about 15 seconds until the cheese is melty.
While one waffle is in the microwave, spread the raspberry jam on the other half. Put it on top of the ham/cheese waffle when it comes out of the micro, and voila! Morning Monte Cristo!

It's SO yummy, has lots of protein in it to get your day going, and depending on what ham, waffles, and jam you use, it's roughly 280 calories.

Here is an egg muffin recipe (from recipezaar.com) you can make ahead of time and reheat on the way out the door:

SERVES 6

6 slices of pre-cooked Canadian bacon
6 eggs
1/2 cup freshly grated parmesan cheese
1 teaspoon italian seasoning
1/2 teaspoon black pepper
Preheat oven to 350.
In an x-large muffin pan, spray each muffin cup with Olive oil cooking spray.
Place one piece of Canadian bacon in the bottom of each muffin cup
Crack an egg over the piece of bacon in each muffin cup. Sprinkle the Italian seasoning and pepper over the egg in each muffin cup.
Sprinkle the cheese over the egg in each muffin cup.
Place in preheated oven and cook for 15 minutes or until the cheese is slightly brown on top.

There are lots of variations of these muffins thanks to the South Beach diet- you can probably find lots of different ideas if you google "egg muffin recipes"

I wear a size 6, but an 8 feels so good, I buy a size 10.~ Dolly Pardon

Well, I haven't had it in YEARS, but I had an unopened box of Cream of Wheat in my pantry for quite some time and decided to give it a try yesterday. YUM! I haven't had it since I was a kid, and I forgot how much I enjoyed it.

One serving kept me full all afternoon (I actually forgot to eat lunch and had to force a few bites down once I realized that I hadn't eaten). I just added a teaspoon of brown sugar and 2 teaspoons of low-fat butter. Just like oatmeal, you can add fruit, cinnamon, honey, etc. to change it up a little.

I think is going to be my new go-to breakfast for a while. Does anyone know of any good recipes using cream of wheat? I'd love to try it prepared in different ways.

I have these turkey patties a lot alone or with some sauteed spinach. Combine all the ingredients and make 8 small patties. Fry two in a little olive oil and freeze the rest. They defrost really easily

1 pound 99% fat-free ground turkey breast
• ¼ grated onion
• 1 beaten egg
• 2 tablespoons finely chopped pecans
• ¼ teaspoon finely crushed fennel seeds

For a little while I was making really yummy breakfast sandwiches - 1 scrambled egg white, with 1 slice of FF american cheese, 1-2 slices of ham, all on a light english muffin.. very yummy and filling.

I love oatmeal in the morning, I make it with 1% milk, and sometimes put dried cranberries in, just a tablespoon or raspberries or a good teaspoon of natural peanut butter and a little cinnamon. It is like eating an oatmeal cookie...but healthier!

Can you tell the protein powder is in your oatmeal? I keep thinking it would be a great way to get some extra protein, but I don't want to taste it or feel the powdery consistency. I recently ordered a smoothie at Keva juice with the full scoop of PP and could only drink about half of it. The PP seemed to dilute the taste and it was just powdery or grainy or something.

I get my oatmeal all ready the night before. I mix 3/4 c. of oats with 1/2 scoop of protein powder and some cinnamon. I chop up some strawberries and have them ready in the fridge, or I toss some raisins in, then in the morning all I have to do is mix in some skim milk and microwave it for a 1 1/2 minutes. Then I sprinkle a little brown sugar on it, YUM!!! SO satisfying!! I love breakfast!!

I love have my egg & muffin toaster to make sandwiches. I can poach a "scrambled" egg, heat up a little meat (morningstar breakfast patties are good or a slice of lean ham) and toast a muffin all at once in a few minutes while I doing other stuff. Then throw it together, wrap it in foil and take it with me. It also will make hard-boiled eggs (4 at a time) that you could use for egg salad if you prefer! I got my toaster for $35 at Walmart.

Oooh, I like the frittata idea. I've done something similar with frozen waffles before.

I got another suggestion and tried pre-boiling eggs to have available. I made a quick egg salad on toast this morning and it was quick and hit the spot well. :)

If you follow a low carb diet you don't have to be hungry at all after you wean yourself off of the carb cravings. And the bonus is that you lose more weight initially on low carb.

I read somewhere in the past couple of days that you can lose more weight if you have a hearty breakfast high in protein and carbs. Even on a low cal diet, if half your carbs are on breakfast, you feel more satisfied and do better the rest of the day.

I know this is how I am. I think the egg white omelet would be good, especially if you included some whole grain bread for the carbs.

I like omelets and scrambled eggs (no runny yolks please) and eat them out. However, I have this mental thing about how raw eggs look and I just can't force myself to eat eggs that I have cooked.

I also keep looking for quick and easy high protein items that I can eat for breakfast.

I think if you pre-chop some veggies you can have a quick scramble or even put it into a wrap take it to go.

I like onions, peppers, mushrooms and asparagus. I just keep a container of them chopped up. Heat in a skillet til desired doneness and add an egg, into a tortilla a lil sharp cheddar cheese and Im good.

For meat choices I go with turkey bacon or MorningStar "Sausage" patties (my cousin cant tell the difference)

And if you ditch the tortilla maybe before adding veggies you can saute up some chopped potato.

You can frittata's and reheat in the microwave as well as using frozen waffles, but top with salsa and sour cream. Another option is poached eggs which cook quickly. They can even be made in the microwave. There are also lots of good strata recipes and they reheat beautifully in a microwave.

Problem - most of these ideas are not very "quick" which is also important. I'm usually rushing like a maniac in the morning to leave for work. I need something I can prepare ahead of time and reheat or something that is super quick (less than 5 minutes) to prepare.

Smoothies are great, but I got kind of tired of them. I'll probably get back one day, but I had to stop, they were driving me nuts. Now I've got a vita-mix that doesn't get used enough. emoticon

Egg white omelets are always good....I like to put mixed peppers, broccoli, tomatoes, zucchini, whatever Ive got in the fridge. I use an ounce of Cabot 75% reduced fat cheddar cheese grated on top. I like to eat it with some black beans and fresh salsa too. How bout whole wheat pancakes and turkey bacon? Or a turkey bacon, egg white, and low fat cheese sandwich? Or in a whole wheat wrap with some fresh salsa? Hope that helps!

It depends on what diet you are on but I follow a modified low carb/south Beach diet. I would ditch the hash browns but eggs are good for you. I eat eggs every day with turkey bacon or turkey sausage or Canadian bacon, or real bacon. I stick with a serving. And sometimes I eat a half grapefruit or some skin chocolate milk if my blood sugar is good.

Ok, I admit it. Breakfast is my biggest weak point. I like hot breakfast like eggs and hash browns. I don't always want something "sweet" (cereal, oatmeal, fruit, etc..) for breakfast, I want something more savory.

Does anybody have ideas for hot, savory, quick to prepare breakfast meals that healthy?

Am I asking too much? emoticon
