Just thought I would share the way I make chicken nuggets for my 2yr old and my hubby...I got this out of Deceptively Delicious by Jessica Seinfeld...
First of all, I steam brocolli. Once it is soft, I puree it. From there I take about a cup of puree and add an egg to it, mix. I take the chicken breast cubes, toss in WW flour, dip in puree/egg, and toss in Panko whole wheat bread crumbs. I use extra virgin olive oil to brown them in a pan. So they get some vegetables in there and they taste amazing. You can also use sweet potato for a different flavor. The brocolli ones are good dipped in a low fat ranch...

I use grated Parmesan cheese because it adheres to the chicken best.

This does sound good - and so easy! Do you use grated or shredded Parmesan, or does it matter?

This sounds great, and so simple too! I printed your recipe out and will try it maybe even today, in fact will do today!! I know the feeling about spaghetti and ketchup - my DH hates both! He's strictly "meat and potatoes". I love the Italian foods! But at least he likes chicken!! (but not Italian style:( THANKS FOR THE RECIPE - My granddaughters should love it too!! 3, 6 and 8 years old - most of what they get at home is the processed chicken nuggets. I'll pass this easy recipe on to their Mom as well. Hopefully, she'll use it since it's so easy. I love to cook - she doesn't. emoticon
HEY - I noticed we both weigh 136, but I'm only 5'0"!

Ok, my son is the pickiest 10 yr old you will ever meet. Let me summarize it by saying he hates spaghetti, ketchup. Who hates this??? LOL

Anyway, I am always looking for ways to get him to eat better (less processed) a major challenge for a finicky kid. I finally came up with my version of chicken nuggets and he loves them.

So here's to those who understand my pain or just want your own version of healthy chicken nuggets.

Recipe Ingredients:

Boneless chicken breast cut up in cubes
1/4 Cup of parmesan cheese
1/2 Cup Whole wheat flour (this cannot be substituted)
salt to taste
pepper to taste

Season the whole wheat flour with salt and pepper
Dip chicken breast cubes into the parmesan cheese and then into the whole wheat. (note no need to dip in egg wash) everything will adhere.

Fry up in canola oil, with as little oil as possible in high heat. Let brown.

This is too simple, but trust me it looks and taste great and even fool's my little boys taste buds.
