Just thought I would share the way I make chicken nuggets for my 2yr old and my hubby...I got this out of Deceptively Delicious by Jessica Seinfeld... First of all, I steam brocolli. Once it is soft, I puree it. From there I take about a cup of puree and add an egg to it, mix. I take the chicken breast cubes, toss in WW flour, dip in puree/egg, and toss in Panko whole wheat bread crumbs. I use extra virgin olive oil to brown them in a pan. So they get some vegetables in there and they taste amazing. You can also use sweet potato for a different flavor. The brocolli ones are good dipped in a low fat ranch...
This sounds great, and so simple too! I printed your recipe out and will try it maybe even today, in fact will do today!! I know the feeling about spaghetti and ketchup - my DH hates both! He's strictly "meat and potatoes". I love the Italian foods! But at least he likes chicken!! (but not Italian style:( THANKS FOR THE RECIPE - My granddaughters should love it too!! 3, 6 and 8 years old - most of what they get at home is the processed chicken nuggets. I'll pass this easy recipe on to their Mom as well. Hopefully, she'll use it since it's so easy. I love to cook - she doesn't. HEY - I noticed we both weigh 136, but I'm only 5'0"!
