On the turkey. Do you cut them up to put in the bowl or put everything else on top of them? Also, do you use 6 slices of turkey or 8? It sounds great.emoticonemoticon

Here's a tortilla roll-up I made tonight (the central air in my house broke yesterday and I was NOT turning on the stove/oven!!!). This is basically a slimmed down version of a Better Homes & Gardens recipe:

1-1/2 medium tomatoes, chopped
1/4 cp chopped fresh cilantro
1/2 tsp onion powder
1 sm jalapeno pepper seeded, chopped
1 TBL fresh lime juice
6 slices turkey lunchmeat
1 TBL fat-free mayo
8 whole wheat tortillas (I used Mission brand)
1 cp fresh spinach, chopped
1/4 cp salsa

Combine all ingredients in bowl and toss.
Spread on tortilla and roll. Makes 8 roll-ups.

* Amount Per Roll-up
* Calories: 158.6

* Total Fat: 2.8 g
* Cholesterol: 3.2 mg
* Sodium: 547.9 mg
* Total Carbs: 29.0 g
* Dietary Fiber: 2.6 g
* Protein: 6.0 g

I was full with just one for dinner tonight, but you could easily have a couple and still be calorie-compatible. With some fresh veggies or fruit, it's a light, cool meal! Let me know if you try it.
