Here's another fun strawberry recipe. It's from Cooking Light

Serve with grilled fish, pork, or chicken. We tried it with cilantro and mint and liked both combinations.

1/2 cup chopped peeled kiwifruit
1/2 cup chopped cucumber
1/2 cup chopped red onion
2 tablespoons chopped seeded jalapeño pepper
1 tablespoon chopped fresh cilantro or mint
1 teaspoon grated lime rind
2 tablespoons fresh lime juice
1 tablespoon orange juice
1 tablespoon honey
1/4 teaspoon salt

Preparation
Combine all the ingredients in a medium bowl. Cover and chill. Serve the salsa with a slotted spoon.
Note: Store salsa in the refrigerator for up to 2 days.

Ice Cubes
1/2 cup cold water
1 Tub 8oz. low fat lite cool whip (thawed)
1 cup chopped strawberries
1 ready to use low fat or reduced fat graham cracker crust.
1 cup sliced fresh strawberries
STIR boiling water into dry gelatin mix in large bowl at least 2min.or until dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin;stir until slightly thickened, Remove any unmelted ice.
ADD whipped topping; stir with wire whisk until well blended. Stir in choped berries. Refrigerate 20-30 minutes or until mixture is very thick and will mound. Spoon into crust.
REFRIGERATE 6 hrs or overnight until firm. Top with sliced strawberries. Store in refrigerator.
Recipe taken from Cooks country magazine.
I pick strawberries yearly and make all these recipes. My family loves all strawberry recipes the month of June-July here in NEPA. I hope this helps

Hi everyone! With strawberry season here, I'm trying to figure out some tasty strawberry dessert recipes. I have a pint of fresh strawberries as well as frozen ones, so any recipes will work! Low cal and/or splenda recipes would be the best :) Thanks!
