I just joined this team a few days ago and this is the first recipe I saw and knew I had to try. It was great!! Except I made it on a whim and didn't have some of the ingredients. I had just used the last of my fresh tomatoes so I added a little tomatoe sauce and water to simmer in. I didn't have couscous so I used brown rice. My family is also huge on cheese so I added a cup of nonfat cottage cheese. Thanks for the great meal idea tonight!

1 lb. extra lean ground beef 1 can no-salt added diced tomatoes (not drained) 1 onion chopped 1 clove garlic chopped 1 T parsley 1 t oregano 1/4 t ground black pepper 2 t olive oil 3/4 c whole wheat couscous
put 2 t olive oil in a pan, add onions and garlic and saute 2 minutes. add in ground beef and cook until browned. add in tomatoes and spices and reduce heat and simmer for 10 minutes or until onions are fully cooked. while this is cooking, cook couscous according to the directions on the box. serves 4-5 people. It was really really good. I made it last night.
