Vegetarian Times has a website and while I'm not a vegetarian there are some great recipe's for side dishes or even for a meatless lunch. I am trying to incorporate a meatless meal in about twice a week. Allrecipies and Cooks.com are other sites I view often.

While I don't currently have a have a favorite yet, several gluten free sites are being visited by me more often now.

Been on a Mushroom kick just a simple sauté in a little olive oil or butter with salt and pepper - YUM!! Must be missing some nutrient, glad they are good for you.

I'm new to this team...I LOVE to cook and spend a ton of time online looking for recipes. Some of my favorite healthy cooking websites are:

ohsheglows.com ----Mostly vegan recipes, some are not necessarily lo-cal but all contain whole, unprocessed foods

kalynskitchen.com ---This site is based around the South Beach Diet but even If you're not doing South Beach, you can find so many easy, healthy meals on here. Particularly, she's got a ton of great crockpot recipes and also lots of healthy grilling recipes for the summer!

Finally, when in doubt, I can always type an ingredient into foodblogsearch.com and have something delicious pop up!

I am a "supporting member" at www.allrecipes.com and I am able to add weblinks in addition to "personal recipes", so I use that as my ultimate recipe book. Any links I find on other sides that I'm interested in or have tried, I add to my recipe box as a weblink, and recipes I pull out of cookbooks and magazines that don't have a good online link I type in as a personal recipe to save and access that way.

I found http://www.e-mealz.com for great recipes for all different type diets. There is a small charge but they give you 5 new recipes each week, and they list the ingredients you need to buy according to the type diet you choose.

I have made a couple of Low carb meals, and they turned out great! emoticon emoticon emoticon

But here is one of my very own. I hope everyone enjoys it!

So I've gone back to basics and am starting off small again. And today, instead of a lovely steak burrito with all the fixings, I decided to make something different.

The weather here has been fabulous! It's been in the upper 80s and I didn't really feel like making hot food. So I made ceviche. Ceviche is usually made with raw, white fish but I couldn't find any that I was happy with so I opted to use pre-cooked shrimp.

I rinsed my shrimp under cold water and chopped them up. I chopped up 2 vine tomatoes, 1 small white onion and a big bunch of cilantro. Chopped it all really well. Then I quartered 5 limes and with my lime squeezer, squeezed all the juice into my bowl with my aforementioned ingredients. Then I added in a little bit of hot sauce to taste (Tobasco or Tapatio will do nicely) and voila! Instant low-cal meal!

This is traditionally eaten with tostada chips but 4-5 ounces will render you about 700 calories or so, so I've found a much better way to enjoy tostadas. Bake them! Actually, I have a heavy, flat cast iron griddle that I use for roasting my chile peppers or making fajitas or fish for fish tacos, and I take a few corn tortillas and with the griddle on low, I leave them on there until they're hard and only turn them over once. It's totally low calorie and it's delicious!

I figure since I'm not quite back on my Elliptical wagon, I had better watch what I eat because I haven't lost any weight in a few weeks.

Enjoy! This is a delicious meal!

When you really live, there's just no time to be bored.

Here's a South Beach diet recipe I got today. Looks good? Shall we try it?

Chicken Green Curry (Phase 1)

Description
If you thought making a quick Thai curry at home was impossible, think again! With some store-bought curry paste, made from green chilies, lemongrass, and Kaffir lime, you'll be putting together an authentic, home-cooked curry in a jiffy. Look for the paste in the Asian foods section of your market. Serve this dish with sautéed vegetables or, in Phases 2 and 3, with brown rice.

Prep time: 15 minutes
Cook time: 20 minutes

Serves 4

Ingredients
1 (1/2 pound) bunch spinach (6 cups)
2 teaspoons canola oil
1 small onion, roughly chopped
1 (13 ½ ounce) can light coconut milk
1/4 cup lower-sodium chicken broth
1 tablespoon green curry paste (from a jar with lemongrass and Kaffir lime)
1/4 teaspoon salt
1 1/2 pounds boneless, skinless chicken breasts, sliced into thin strips
1 (1 pound) eggplant, cut into 1" cubes
2 tablespoons fresh lime juice

Instructions
Cut tough stems from spinach; submerge in cold water and rinse thoroughly to remove any dirt.

Heat oil in a large straight-sided skillet over medium-high heat. Add onion and cook, stirring often, until softened, about 5 minutes. Stir in coconut milk, broth, curry paste, and salt; bring to a boil, reduce heat, and simmer for 8 minutes.

Add chicken and eggplant; bring to a low boil, then reduce to a simmer and cook, stirring occasionally, until chicken is no longer pink inside and eggplant is tender, about 8 minutes. Add spinach, stir, and cook 1 minute more. Stir in lime juice and serve.

Nutritional information
Per serving:
340 calories
12 g fat (6 g sat)
15 g carbohydrate
44 g protein
5 g dietary fiber
400 mg sodium

Was searching for a good medium calorie pickled beets recipe and got to Taste of Home which I have subscribed to on and off over the years. But...they have a healthy magazine now and on their website they have a healthy section including recipe makeovers and healthy meals. Another option for those of us looking for healthy recipes. If I get there I'll edit this and put in a link:)

Cyn if you click add to favorite and then go in your favorite and click copy on the site you have there, then go to reply in Healthy Rec Websites board and you will see add a link. Click on it and then a space will open past link there and then his below to send it to the message you are writing. That way when it comes on everyone will be able to just click on it and go on the site.

My favorites are www.drgourmet.com and www.eatingwell.com Eating Well has a bazillion recipes and is wonderful, but I really love drgourmet.com He really is a physician, and he is a chef ... great recipes and great nutritional information including which recipes are good (and not) for heart disease, GERD, coumadin users, diabetics, etc.

If you have grandkids, especially granddaughters it is a good idea to make things with them and then type out the receipe. I do this and now she has quite a few receipes of things we made together. She looks at it and makes stuff at my house. She can make meatloaf, chicken, cheese sticks, tuna hamburgers. Also, pizza. She cooks yams and helps her mom with Thanksgiving turkey dinner. I am from Mass.

I second what PERIWINKLEJENN and CHEFSOPHIE said about Ellie Kreiger recipes from www.foodnetwork.com and her new cookbook. Even my family has liked her recipes, and some of them can be pretty picky eaters :) I have also appreciated that she includes the nutrition information for each recipe.

To follow up on the last post. While not a website source. The whole foods here has family night from 4:30 till 6:00pm on Fridays. They give out samples of recipes and then tell you how to make things. So first you taste and if you like it you can get the recipe and ingredients from them.

each week they feature a different food. i check the site every week and try to eat the featured food at least once that week :)

The whole site doesn't have healthy recipes - certainly not with Paula Deen, Emeril, and Rachael Ray around! - but I would recommend going to foodnetwork.com and looking at Ellie Krieger's recipes. They are healthy, and she includes nutrition information for each one. (She also has a good cookbook, as well.)

I just discovered this new website for a magazine called Eating Well. The website is amazing! You can do advanced searches on their recipes and choose anything from low sodim to high potassium recipes. There is something for everyone! It amazing!

For the past two months I have started my very own cookbook with all the healthy recipes I have found from Sparksrecepies.com , eatbetteramerica.com and a new site I found today kraftfoods.com they have a large verity of healthy recipes that I cannot wait to try. Wondering if anyone else knows of other websites where I can get more :) This is a cookbook that I plan to use for life not just while I'm on my diet.
