I made the 'Japanese Potato Salad' from justhungry.com and it was good. I modified the recipe because I didn't have a cucumber so I chopped up a rinsed dill pickle. Next time, I would try cutting back on the calories by using a mixture of yogurt & mayo instead of all mayo.
I read several Japanese cookbooks on potato salads and simmering the potatoes whole for 30-40 min was consistent in all of them. The justhungry.com recipe have you cook a whole carrot and boil the eggs with the potatoes and then peel and chop. I discovered it was easier to chop a cooked carrot than a raw carrot with this recipe. I like learning new stuff!
