No Bake Pumpkin Pie

I got the recipe from a girl who lost her weight on WW and became a lifetime member.
She is now already 10 years on maintenance, doing it only at home, very successfuly.

Delicious!
No baking!
Make it in 3 minutes
Just mix the ingredients and freeze Easy to cut one serving directly from freezer

Ingredients

One Ready made low fat graham crackers crust
15 oz. can of pure, solid pumpkin
One small package, sugar free, fat free, instant vanilla pudding
8 oz. evaporated skim milk ( it comes in 12 oz. can. That's why I make THREE pies: two cans are 24 oz - good for three pies)
1 teaspoon pumpkin pie spice

2 cups fat free Cool Whip (1 1/2 cups mixed with the ingredients, and 1/2 a cup as topping when serving it)

Combine in a large bowl all ingredients except Cool Whip.
When all is mixed well, add the Cool Whip. Pour into the ready made graham cracker crust and freeze.

Fiesta Quesadillas

Makes 32 appetizers

Ingredients

3/4 cup shredded nonfat or reduced-fat Monterey jack cheese
3/4 cup shredded nonfat or reduced-fat Cheddar cheese
8 flour tortillas (8" round)
1/2 cup thinly sliced scallions
1 can (4 oz) chopped green chilies, drained
2-3 tablespoons chopped jalapeno peppers (optional)

Topping

1 cup nonfat sour cream
3 tablespoons thinly sliced scallions

Combine the cheeses and set aside. Coat a baking sheet with nonstick cooking spray. Brush one side of each tortilla lightly with water. Lay 4 of the tortillas, moist side down, on the baking sheet. Spread 1/4 of the cheese mixture on each of the 4 tortillas. Top with 1/4 of the scallions, chilies, and jalapenos. Top with the remaining tortillas, placing them moist side up. Bake at 400 degrees for 7 to 9 minutes, or until the quesadillas are heated through and the cheese is melted. Place the sour cream in a small dish and sprinkle with the scallions. Cut each quesadilla into 8 wedges, transfer to a serving platter,
and serve hot, accompanied by the sour cream.

PER SERVING: 41 Calories, 0.5 g Fat, 0.4 g Fiber, 1 mg Cholesterol, 2.9 g Protein,
81 mg Sodium

VARIATION: To make Fiesta Bean Quesadillas, mash 1 cup of drained canned pinto beans with 1 1/2 teaspoons of chili powder. Divide the beans among the tortillas, and spread evenly.
Top with the cheese and the remaining ingredients and bake.

SERVING SIZE: 1 appetizer

PER SERVING: 51 Calories, 0.5 g Fat, 1 g Fiber, 1 mg Cholesterol, 3.4 g Protein, 93 mg Sodium

PUMPKIN SMOOTHIE

Makes 1 large serving (which counts as 2 milks):
3 points per serving or CORE!

* 1 WW vanilla Smoothie mix
* 1 cup skim milk
* 1 cup ice
* 3T canned pumpkin (not pumpkin pie filling)
* 1/2 t pumpkin pie spice

Instructions:
Put all ingredients in blender and mix until smooth. Add a little more pumpkin or pumpkin pie spice if you’d like more flavor. It doesn’t change the points.

Cinnamon Sweet Roll Popcorn

1 bag 94% fat free microwave popcorn (butter flavor)

2 Tbsp Splenda

2 Tbsp dry vanilla dairy shake mix (like the WW brand)

1/2 tsp cinnamon

4 "quick sprays" butter flavored nonstick cooking spray



In large bowl put popcorn and spray with "butter". In separate bowl combine all dry ingredients then pour onto popcorn and mix until popcorn is totally coated. (large ziploc bags are great for this)



Entire recipe is 3 Points or all CORE

HALLOWEEN CEREAL BALLS

1/4 cup margarine or butter
1 package (10 oz.) marshmallows
2 Tablespoons orange-flavored gelatin
6 cups crisp rice cereal
1/2 cup candy corn

Combine margarine and marshmallows in 2-quart glass bowl. Microwave (high), uncovered, 2 1/2 to 3 minutes or until marshmallows are puffed. Add orange gelatin; mix until combined. Stir in cereal until well coated. Mix in candy corn. Cool enough to handle.

With buttered hands, form mixture into 24 balls. Place on waxed paper until cool. Wrap tightly in plastic wrap for storage.

Tips: Pieces of cut black licorice can be substituted for candy corn.

Mixture can be pressed into greased 13x9-inch baking pan and cut into squares for serving.

Per Serving: 85 calories, 1 g. protein, 2 g. fat, 119 mg. sodium, 0 mg. cholesterol.

Weight Watchers Mulled Apple-Cranberry Cider

This hot drink is perfect for chilly autumn nights. 2 POINTS per serving.


6 servings
20 min
5 min prep

3 cups apple cider
3 cups cranberry juice cocktail
1 tablespoon unpacked brown sugar
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 tablespoon orange zest
3 average cinnamon sticks

Combine all ingredients in a large saucepan.
Bring to a slow boil over medium-high heat and then reduce heat to simmer.
Simmer for 15 minutes and then strain into mugs.
Yields about 1 cup per serving.

Weight Watchers' Candy

8 pieces
5 min; 5 min prep
1 pt each piece

1 Hershey Bar
1/4 cup reduced-fat peanut butter
1 cup Fiber One cereal

Melt chocolate and peanut butter in the microwave together. Stir until smooth. Add Fiber One cereal. Using a spoon, put a spoonful on a baking sheet lined with Wax paper.

Candy can be refrigerated or frozen.

1pkg. Alba Hot Cocoa Mix {I know you can find Swiss Miss Hot Cocoa 25 Calories}
3 Tablespoons Peanut Butter
2 Tablespoons Cool Water

Mix 3 together

Add 3/4 oz. Rice Krispies

Freeze

1 milk, 3 protein, 3 fat, 1 bread

BABY RUTH BARS

Makes 2 servings
WW review recipe board
Make ahead and freeze.


1/4 cup boiling water
2 Tablespoons chunky peanut butter
1 pkg Alba 77 {I'm not sure you can still buy this, could use swiss miss hot choc, 25 calories}
1 1/2 oz. Oatmeal
2 pks. of equal, I would use splenda
1/4 cup raisins

Mix, roll in log, put in plastic wrap, freeze
1 protein, 1 fat, 1 bread, 1/2 milk, 1 fruit

Sweet Pumpkin Dip

2 tbsp. light vanilla soymilk
2 tbsp. canned pure pumpkin
1/2 tsp. Jell-o Sugar free, fat free instant puding mix
Vanilla
1/8 tsp. pumpkin pie spice
1 no-calorie sweetener packet ( like Splenda)
dash salt
Combine pudding mix with soymilk and stir. Add all other ingredients to mixture, stir until blended, and serve it with pretzels, crackers, etc. Yum, Yum.
1 serving =188 cal 1g fat,200mg sodium, 39 carbs, 2 g fiber, 3g sugar,6g protein--
Points=3
This recipe makes 1 serving--you may enlarge the recipe by using more ingredients (like 1 can of pumpkin, ect)

Yum Yum Brownie Muffins

(1 Muffin, or 3 minis - 180 calories, 2.5g fat, 37 carbs, 2.5g, fiber, 2.5g protein - 3 WW points)

This super-simple 2-ingredient recipe is a Weight Watchers Fave!

1 box devil’s food cake mix
1 can solid pack pumpkin (15 oz.)

Directions:
Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.

Cinnamon Apple Crisps

Ingredients
2 small apple(s), Red Delicious or Gala, sliced paper-thin
1 Tbsp sugar
1/2 tsp ground cinnamon

Instructions
Preheat oven to 200°F.

Line 2 baking sheets with parchment paper (not wax paper). Place apple slices in a single layer on paper; sprinkle with sugar and cinnamon.

Bake until lightly browned, about 2 hours. Cool on wire rack and serve.


I thought this would be a good snack since apples are in season right now!

BOO BITES

1/2 stick margarine
30 large marshmallows or 3 cups minis
1/4 cup lit corn syrup
1/2 cup creamy peanut butter
1/3 cup semi -sweet choc chips
4 1/2 cups rice cripsies
line cookie sheet with wax paper
melt butter over low heat
add marshmallows
cook stirring constantly, till marshmallows are melted... remove from heat
add corn syrup, stir till blended. Add peanut butter and chips, stir till blended and add cereal. Stir til coated.
Cool slightly....
With wet hands roll into ball (approx 1 1/2inches) Place on cookie sheet and cool completely.

best part only ONE point per ball!!!!!!
